You took the cold metal bowl out of your freezer, not out of your refrigerator, right? What's the ratio of milk to cream? "A bit of this, some of that". Those aren't measurements, Frenchie. I need a recipe not an experiment. A minute of forethought and this instructional video could have been more helpful than just watching you showing us how easy it is for you or anyone else who has been making it for years.
