    Excellent video! I got this machine on Amazon Friday, read the instruction book, made 2 loaves last night, got the same result you did both times using a combination of wheat and bread flour. (pg. 30) The rubberized shelf liner under the bread maker will hold it still too.

    After watching your video and seeing how easy this machine was to use - i bought one for myself. i got my Oster bread machine about a month ago and i LOVE it! I had to learn to tweak the amount of water a bit too the first couple of times.
    the breads are delicious and addicting. Any left over bread that gets dry makes great bread crumbs too.

    The bread fell because it was to wet. Your dough should not be sticky. When you touch it and your finger has dough stuck to it you have to much water. The humidity in the air also plays a large part in how you have adjust your water / liquid.
    I've been making bread by hand , with a kitchen aid or in a bread machine for 34 years.

      Loretta Montgomery you can obviously answer the question. You should ask yourself which is better. But the us dependent on your situation and what you want to do. I love fresh bread.
      The egg came from my backyard chicken flock so they aren’t your weak skinned all white store bought eggs.

    Thank you for sharing this. I just made my first ever loaf of bread with this Oster bread maker. It turned out great. I used 2 cups white flour and 2 cups whole wheat flour and added honey . Richard in Dallas, Texas.

      Thanks, I didn't use your specific brand of flour, but just a regular brand of flour but used Fleischmann's Bread Machine Instant yeast, it comes in a 4oz brown bottle, followed your mixing procedure, though

    If some of the dry ingredients are getting stuck in the corners and not being incorporated in the dough, you can try using a narrow rubber scraper, butter knife or wooden spoon to knock them loose and into the kneading blade's path. However, you need to work quickly and use a fairly sturdy implement to do this, so neither the implement nor your fingers will get injured when the ball of dough gets knocked towards the corner you're working in.

    I just paid $6.50 on half price day for my Oster 5814 , early unused, no manual . but it 's on line. I'll l be using this video. I recommend that if you have a bread machine already , yo check the thrift shops periodically to spot one that is a sma model . if you hit the store on a sale day. You'll have all the spare parts you need when these wear out. I'd never buy a new bread machine. Thrift shops and rummage sales alway have several.
    I'm not going to bake my bread in it. i wan tiof for mixing and proofing dough. especially for pizza. Then i 'll use my oven.

    I have never had any luck of butter mixing in smoothly at all. Just use SUNFLOWER OIL.
    If you like using your home eggs then you must greatly reduce the amount of liquids including oil !
    An egg is about 2 TABLESPOONS.

    Happy you posted this video. Very informative. I'm hoping you got to the bottom of your sunken bread issue. Slightly less moisture will do the trick.

      Adeline Nicholas thanks! I’ll sell you my Xterra for $1200. Lots of miles, needs upper control arm bushings (I have those), need a new oil pan seal! Other than the odd silver driver side door it could be yours. I even have the original door if you want to have the key barrel.

    Bread dough needs to be SLIGHTLY tacky. A butt cheek is SLIGHTLY too dry - this is where people go wrong.
    Falling tops are due to high yeast or liquid amounts - but also lack of quality of gluten in flour.
    Use VITAL WHEAT GLUTEN to always prevent a caving in top. It puts steel girders in your bread for structure - just like a skyscraper ! ! !

    Yup add flour or water to the dough ball, but as others have said, wet and sticky is wrong. It should be dry to the touch. I used to help my grandfather, yes grandfather, make bread... his loaves were so lite and airy you could mash it down to about an inch tall. His cinnamon raisin made your mouth water. He, of course, balked at bread machines when they first came out. He used to cook for the lumber mills when they ran logs down the river to the mill... man could he cook, I was probably the only kid who liked liver and onions... well, his liver and onions. Maybe I ate it just for the bread. I'm getting into making bread, just sick of store bought junk and want to control the ingredients in my food.

    I have the same machine you do and had the same problem of the bread falling. What we did was simple, I just found another recipe and have had no problems sense ( unless you count the bread being eaten with in a couple of days..=))

    Next time try holding back about 1/4 to 1/ 2 cup of the flour, add it in as needed when its kneading its easier to add a little flour than water

    I just purchased this machine. I'm wondering, if all your bread came out this way (though tasty, it didn't seem to rise correctly)? Or did you have success after using the machine, and or changing the recipe? What caused the dough to fall do you know? Was it the machine??

      Mr. Barker, after cruising youtube for different recipes. I came across this one and it truly is the BEST! Bread Machine Recipe:
      1 cup warm water
      2 1/4 tsp of bread machine yeast
      2 T-sp of shortening
      2 T-sp sugar
      1 tsp salt
      2 1/2 cup bread flour
      (this makes 1.5 loaf)

      Just pick up on the handle firmly. If you want to hold the outer shell with the other hand that could help as well. Congrats! You’ll love it! Homemade bread is fabulous.

      All purpose flour won't really work - it will give you more of a cake like finish than a bread.

      Takes about 3 hours from start to finish. I don't think it takes that much energy. I wouldn't worry about it.

      I think all purpose flour would work. I have used it before. The bread was a little "heavy", but it could've been just the first or second time I used it. Maybe I'll try it again!

      You need to use 'bread flour', you won't get the results you want using anything else.

      nah. only during the mixing phase!I think the mix may have been too moist.

      You MAY and SHOULD keep opening the lid throughout. The rising heat is actually very low and would not spoil anything. But DO NOT lift during the third rise and NEVER during the bake stage ! ! !
      Bread dough should be slightly tacky - a butt cheek is too dry.
      Use VITAL WHEAT GLUTEN to prevent falling loaves - it adds steel girders to your structure !

      G.W. Barker It takes mine awhile to get all the flour incorporated, and at first I got in there and stirred it around. Be patient -- the machine will get all the flour by itself.

      I have added the dry milk from the recipe in the book. It worked just fine. I enjoy the French bread a lot. I am going to experiment with dough and the other non-bread things next!

      +G.W. Barker Your having used liquid milk made your bread ball too moist, instead of adding liquid (water) during the first mix/knead phase, you should have added flour, a teaspoon at a time, watching and waiting for a dryer (less sticky) ball to form. Next time, use non-fat dry milk and maybe a little less yeast, instead of two teaspoons, try a teaspoon and a half. In my most recent recipe, I used dry milk and an 8th of a teaspoon of yeast along with the other ingredients and got what I wanted... Best wishes

      +Terri S, I should have said: a teaspoon and a half plus an 8th since I'm a bit above sea level. My breads were sinking in the middle too. There had been conflicting instructions regarding the amount of yeast to use, I'd been following the recipe and getting the results you did. Adjusting, in small amounts, either way, made the difference.

    Your dough is definitely too wet. You can tell just by looking at it and when it stick to the sides of the pan. I make bread a lot. I am curious though. Did your bread have a yeasty taste to it? I found out today that some bread recipes make breads that taste yeasty and I don't like it. I no longer follow the bread machine instructions anymore. Oh BTW, I have one of those Osters too.

    next time you make bread follow this order. all liquids first then dry ingredients then butter put around edges then salt around edges then make well in top for yeast. you top fell in because not enought flour. your mixture after starting to mix was to wet. check at beginning of cycle to besure ingredients are not to wet.

      Do not add salt or sugar anywhere near the yeast, it will destroy the loaf. Add wet first, salt, sugar, flour and you can add the butter cut up in four corners atop flour, dig a little well, not too far down, and put the yeast in the center on top. This looked delicious! I purchased my Hamilton Beach machine and I love it. The Oster was too tall for my counter. Check out some recipes here on TH-cam ... I made a cheddar cheese, garlic and parm, cinnamon and raisin, potato, now I will make your egg yeast bread. Great job!

    You can make your own bread flour, www.food.com/recipe/homemade-bread-flour-substitute-416294Bread flour has more protein aka gluten. King Arthur flour runs on the high side of protein then other brands, so you might want to try using it.
    So reducing the water or the Active Dry yeast fixes that falling bread? Our Oster is notorious for the top falling, we use if now to just make the dough then using a USA Pullman pan and into the oven with no problems.
    The Oster is less noisy and doesn't hop around like the old Breadman we had, it loved to pop the pan loose.

    Why did you measure the yeast when you used the whole package anyway, just dump it in there. This looks like entirely too much work.

    I need to ask this I never came across this before I always in my past did the dry yeast now i make my own wet yeast but this machine is not do it right it is to wet you always put the yeast first at the bottom an then the other . but also i did put it on the dark i do not like light bread an its not coming out it is not going into a ball when it go threw the spinning. it is alway to wet. an I always put in the non beer an not the water. I did it both ways an still it happens when i cut into it after it is done it is very an i mean very heavy bread and every doughy when you do the live yeast it calls you put less flour in it an it came out with this machine it will not can someone help me on the live yeast how to get it right with this bread machine ty

    A properly baked loaf looks as good as it tastes.
    A collapsed loaf can be caused by several factors including too much liquid. Over-proofing can do the same thing. Bread makers do a great job but one must follow the recipe exactly because a tablespoon too much flour (unsifted vs. sifted) or liquid or using a jumbo egg instead of a large size egg or too much salt or sugar or dead yeast can each result in a loaf of poorer quality.
    Use a scale and weigh your ingredients each time. Adjust ingredients until the resulting loaf is just what you want. Once you bake a "perfect" loaf, you then know exactly how much, by weight, of each ingredient to use in the future. Of course if you are not serious about baking a truly delicious and attractive loaf of bread then this advice is not for you.

      I have the same machine he does and I've found that the recipes that come with it are not that great. Better to Google Bread Machine recipes and get better ones. The one I found is a BIG hit in our house and it only makes a 1.5 lbs loaf...=)

    First thing when you add ingredients take the pan out of the machine like the directions say. They want you to do this to avoid spilling things into the cooking chamber. This is a bitch to clean up. Next the reason why you had a sunken top on your loaf is due to adding to much yeast so try using a 1/4 teaspoon less than called for next time. Plus let you butter soften before adding it in. Other than that nice video.

      Butter soften. Check. I'll try that next time as well as cut back just a shade on the yeast. Thanks. As far as adding the ingredients. Yes, one should follow the directions and add things in the pan outside of the machine. It is a bit of a bear to clean. I just needed to add them in like that for my video.       I had the same result last night on 2 loaves. What am I doing wrong? I added a little flour during the initial mixing phase. I used all room temp liquids 1st time, corrected that on the 2nd.

      Too much liquid would probably cause the cave in. But you must be aware that if the quality of the gluten in the flour is poor due to poor wheat harvests then you need lemon juice and vital wheat gluten ! ! !

    Hi ..I've been making bread for a while in a machine and still learning new things .
    Right now I add the wet first ( water @ 120 degrees) then I mix the yeast into the flour ( i tried the rapid yeast and like it better ) and only use 1 tsp per 3 to 3 1/2 cups of flour ..any more and bread falls ...At last mix ..take out the paddles and reshape loaf ..
    It works really well for me now. Also at first mix...check the mixture to see if it is forming a ball properly.This step was critical for me ..since different flours that I was using required different amounts of liquid. ..a video that really helped me was

    This was hard to watch. Complicating things where it isn't complicated. Your incorporation was all backwards, and you don't need to incorporate prior to mixing. The mixer does it all on its own. Time to get out the kitchen and back doing some manual labor of sort.
