You got the gist of what a conductor does. They keep everyone at the same tempo. But they also cue entrances, cut off notes (so everyone cuts off at the same time), indicate dynamics (how loudly/quietly a section should play), etc. Also, to what Alfie says, by the time you're in concert, you've played so so so many times that you have a lot of it memorized, or at least know when you need to look at the music, and when you can take a moment to look at the conductor. :)
As a violinist myself and I can tell you guys you’re pretty much on the nose! The conductors job is to keep everyone in time no matter what instrument or section they’re in. You may not be able to look directly at them the whole time, but you learn to glance so that you’re not going ahead or behind in the music. It’s a super important job!

If you compare it to singing, lyrics and the notes are just 'there' for everyone to read, but the actual singer can add emphasis or pauses (or just emotion in general) and totally make it their own. Since you have a group of people in an orchestra and not just one individual, the musicians can't just go and add their own spin to the notes - so that is what the conductor does and everyone follows his directions. And to Alfie's comment about reading the notes, after you have rehearsed a song a thousand times you pretty much know it by heart and can focus on the conductor ;)
I’ve booked to see Skyfall in concert at the Albert Hall in October and I’m sooo excited! My boyfriend is a conductor! They have such an important job within an orchestra! They tell people when to start and stop. They bring people into together at the same time if necessary and they make all the intricate musical decisions within the music for the whole orchestra! It’s all very normal for me as a musician, but I can see how it can look very strange to someone who doesn’t understand what’s happening!

I am a singer and have recently just recovered from tonsillitis I would highly recommend manukau honey and not normal honey. Also if you can get your hands on any Sanderson mixture it is awful but works wonders for tonsillitis I promise give it a go x
