Summer Pantry and Freezer Challenge - Budget Cooking

Its time for a pantry challenge again. I will be trying to lower my grocery budget by cooking mostly out of my fridge and freezer for a month.
I typically spend about $800 a month, this month I am giving myself a $200 budget.
Lets see what kind of budget dinners we can come up with using whatever I have on hand.
Day 1 - Turkey, roast potato's, salad, gravy, cranberry sauce
Day 2 - Hot turkey sandwich's, mashed potato pancakes, cranberry sauce, salad
Day 3- Turkey quesadilla, watermelon, corn on the cob
Day 4- Turkey tetrazzini, green beans
Day 5 - Turkey Enchiladas, Mexican Rice
Dessert - Caramel Apple Crisp with Vanilla Ice Cream
