- This week I taste four Scotch Highballs in honor of Sir. Winston Churchills birthday. Things get a bit loose, I hope Sir. Winston would approve...

The Scotch Highballs doesn't really fit the definition of a cocktail, it doesn't include a sweetener or bitters or citrus by default. It's nothing more than Scotch and Soda in truth, but cocktail or not, Scotch and Soda is a barroom staple, so I've got to talk about it.
Sir. Winston Churchill is one figure who loved a Scotch Highball. He was quite famous for drinking them frankly all day long, certainly not a habit I'd want to encourage, however I thought the anniversary of his birth was a perfectly suitable excuse to talk talk about highballs. Huzzah!
So, in this episode of How to Drink I make four Scotch Highballs and give tasting notes on each. It's surprising how much the addition of a simple lemon twist can alter the flavor profile of all of these! Now, I suppose he's chucking it in quickly, because he's making slow motion footage, but get a better handling jigger, man. A rounded jigger looks nice, but a conical one (like a Japanese-style) pours much more predictable.
@@Bebop_2962 he explains it in the comments in a different video. But they make a master video in the normal camera set-up. And then he makes the drink again with the close ups. But because of the lighting and stuff he needs his hands in awkward positions. Something to that effect

Fun fact about unhealthy living. Sr Winston ate horrible fatty food, drank like crazy and smoked like a chimney.
He died of a stroke at the ripe old age of 90.

Honestly I think he was pretty stress free despite navigating the war and everything that went with it. I’m going with “low stress” being the winning formula.
He was also a soldier and very athletic in his younger years.
My family has a history of heart disease and diabetes so I'd probably die within five minutes of taking up that lifestyle.

There are very few cocktail videos like this, where you're playing with the variables and noting the huge differences subtle changes make, I think this is a good and unique direction to take for your videos every now and then (too much and it would get too geeky and niche). I watch loads of cocktail videos and this is the first one I've ever really seen that nails that subtle changes=big differences dynamic that makes cocktail making so much fun and an art form. I don't think you'll get instant big spikes of likes with this sort of thing but over time you'll get some people deeply appreciating the uniqueness of your content.
Ditto, this is probably one of my favorite vids on the channel because of this. It really helps me decide what directions I want to experiment more with.
Hello Greg, I am new to your channel and enjoying it very much. The taste profiles are fascinating, I agree overall with Paul. You make drinking an art form! I saw a video on Facebook called HOW TO DRINK. Thought it was a crazy topic as drinking, for addicts can destroy lives. You make it an art form and heighten the appreciation factor for people who only occasionally enjoy a drink. If you are going to drink, know what you are doing and savor it. Thank you for all your research and your knowledge base in movies and what not. Yes, I watched quite a few of your videos today. Am from NJ, and appreciate your references to the state. OH, wanted to mention, that peat note, I get what you are saying about the petrol diesel fuel fume taste. I think also that for people from Ireland and other countries that use peat to heat home it also has a deep connection to home for them. just mentioning. not a criticism. Thank you again for such an entertaining presentation with each video, even the edits, which I love and have laughed over repeatedly. sometimes they sound like the chatter in my head when critiquing myself talking. fun stuff.

Literally as soon as you said “what does malt taste like,” I said to myself “well, I sort of think of it as tasting like Cheerios without any milk or sugar, but with a ghost of a sweet flavor...” Five seconds later, you described it just that way. I’m weirdly pumped by that, since I really don’t have any practice at doing tasting notes.
It's like the corn flakes notes in bourbon. They hate when I say it tastes like cornflakes.
To me it's Milk Duds without the Chocolate, or a Malt (milkshake) without the Ice Cream.

God I love Laphroaig. I've been waiting forever for this to pop up in a HTD video. Mainly, I like it by itself, but I did a Kilt Krawl in KC where they showcased a ton of Laphroaig cocktails. I don't remember any of them enough to remember ingredients, but they were all incredible
I was born and raised in New Orleans and went to school in the French Quarter as a boy and listening to your videos with its New Orleans style music. After school walking the quarter with friends hearing musicians and up to mischief, takes me back every time. thanks man.

As a novice scotch, whiskey, and bourbon drinker who appreciates the subtleties I very much appreciate this analysis.
I finally got my hands on some Monkey Shoulder Scotch today. It had been out of stock all over my area (Columbus, OH). I sipped on some neat and now I am trying it with 1 cube of ice. It is amazing!

Try the laphroaig 10 year! I get lots of herbally notes on the mouth and nose not just the smoke and leather, metal, petrol, and salt ocean type notes he was "how to" was talking about. It is very complex if you can get past the smoke, Lol. Not the only oak wood campfire type smoke it's like.... Burning fresh sagebrush while camping in essentially the Wyoming Sahara type areas kind of smoke. 😂 That's just what I have experience with and can connect.
@@greenmarcosu Monkey Shoulder is wonderful stuff. Try Angel's Envy, Bulleit (the Rye is especially fantastic), and Jameson's Black if you haven't already. Avoid the Islay's, especially Laphroaig. Try it at a bar if you can before investing in a bottle, only to find out it is terrible. He says it's "challenging" in the video because too many folks would have a fit if he said it was bad. Who wants to drink diesel soaked, mossy leather? Not me, but whatever makes you happy I guess.
Those light scotch highballs like Churchill drank all day…. I’ve added a small splash of scotch to my bitters and soda. What a combo. Practically alcohol free but very tasty
When I was in Japan last spring, I bought a bottle of my go-to scotch.....Talisker 10. In the container, there was a packet of peppercorns. I did the Google thing, and found that the Japanese enjoy talisker in a highball with ground pepper on top. Try it out....its great! Although, I still prefer it neat.
Talisker has a peppery character to it even before you add any pepper to it.

I’m a grad student in Churchill College, Cambridge. We do a toast for Sir Winston after every formal and I’m sure he would be especially proud to know that the grad students run a private bar for ourselves. Gotta follow Pops' example!

@@howtodrink One has to say that Red label was much better back than then it is now. Back in those days there were not that much of a fuss about age statements so Johnny Walker could also often buy stock that was getting old at other distillers that they couldn´t sell fast enough and they would put 20 year old scotch into the red label.

Traditionally the peat comes in when malting the barley. When germinating the moist barley, heat is applied by burning peat bricks. The peat smoke leaves a deposit residue of oils and flavor that come through the whole distillation process. Just FYI...
To be more precise, the peat heat/smoke is used to STOP the malting of the barley. Keeping the sugars in the cute little malt sprouts that will soon make the best spirit the universe has ever seen. LOL

How To Drink A man of your talents?
I really like the way you describe tasting notes in liquors. As a mixology hobbyist, I’m always finding ways to expand my vocabulary and mental models for tasting. Also your style of humor fits really well.

To me the most impressive is how many cigars he smoked per day. Even though you don't inhale cigars you still absorb nicotine through your lips and mouth. In fact the average Cigar has about 200 mg of nicotine which is enough to kill you. The fact he smoked 8+ cigars per day without at least getting sick was incredible.
I've smoked one Churchill sized cigar, ever. I'm not an infrequent cigar smoker, but I thought I was going to vomit about 3/4 of the way through, and felt like my heart was doing something funny. Like an idiot, I finished it, and the symptoms got worse, but they wore off over the next several hours.

Did some fiddling around today and came up with something I’m not too ashamed of - 6 cL sherry, 2-3 cl rye, barspoon maraschino luxardo, barspoon of the juice from maraschino cherries (I use amarena fabri) and maaaybe a dash orange bitters. Not sure it needs the bitters. Thinking of calling it a “Sherrye”.
Give it a try if you like sherry.

This was awesome! You should do a similar video, but with gin and tonics. They're simple 2 part "cocktails" just like the scotch highball, gins are diverse enough you could try with multiple kinds just like scotch, AND I know you love gin lol.

Not to be pedantic, but theoretically, gin and tonic has line, so 3. But, it'd still be an awesome episode, if longer, because I know that How to Drink got me on to tonic syrups, and then moving and matching THOSE to the different gins could be a whole thing.

Laphroaig is like getting hit in the face with a basketball while sitting next to a dowsed campfire covered in seaweed on the beach. Rubbery, phenolic, medicine cabinet, alcohol, sea salt, smoke, smoke, smoke: Awesome.

I've never really gotten the rubber notes on Laphroaig. I describe it as imagine taking a good thick rib-eye steak. Totally encrust it in salt and throw it on a charcoal grill. Just as it's approaching done and the juices are starting to flow, pick it up, hold it over your mouth and let them drip into your mouth. Lick the salt crust before swallowing while breathing in the charcoal smoke. Delicious.
@@wingracer1614 Hits me about like walking into a housefire, going to the medicine cabinet, pulling out the iodine, chug the iodine and sniff rubbing alcohol at the same time. Laphroaig, and Islay's in general, are not drinkable to me in any way. Young or old. Have unfortunately wasted a fair few dollars to figure that out.

The first time I had Laphoaig it was drinking a fireplace. I was overwhelmed. But wait for it and the leather and salt and caramel comes through. It’s a fabulous whiskey.

In addition to being my soulmate, I describe Laphroaig as follows: You are sitting in an ancient, cold, damp, musty cave filled with old, stale dust. The cave is right at the sea side. It is cloudy and rainy, and the wind is blowing the briny foam right into the cave. To keep warm, you are burning a tire. You got warm enough, and put the fire out by dumping copious amounts Chloraseptic onto the burning tire.
I'm getting deep into a bottle of Irish whiskey and I can't believe that I found this channel. What an awesome coincidence. Subscribed :) Churchill was a beast for the alcohol.
I think this is the first time I've watched the show, but I liked this episode. I like the idea of making the same drink with different types of the same liquor to see how the drink evolves. Your tasting notes really give a good idea of how the drinks transform. Then adding the lemon later, which I almost always add lemon or lime to my cocktails too, made the experiment even more interesting because for some it seemed to change the drink a good deal.

Peat is added after malting the barley. It's used to dry the malted grain and stop the process. They didn't have electric fans to dry the malt way back when so they burned peat. Isle malts keep the old way of doing it because it adds that smokey flavor everyone likes.. or hates. Then it's cracked, crushed, ground up, whatever they do, and fermented with yeast into the mash and then distilled.
I loved the episode! A little history, making drinks, and some experimentation while throwing in a taste comparison. Thanks for a great show.
I really like this approach: taking significant historical figures (politicians, authors, celebrities, etc.) and analyzing their favorite drinks!

Churchill was a man of his time, and that generation and class could and did drink... what we would now consider heavily.
Also, try using Hanky Bannister. This is reputed to have been Sir Winston's preferred blend.
Heavily peated whiskies are intended to evoke the smells of the fireplace or campfire and are ideal at ski resorts and such, for this reason. Wintry.

This was definitely the right way to do a Scotch episode. So many different blends and flavors that there's no way you could just make one drink and call it a day.
Also, it's not even 10am and now I wanna try a Laphroaig and soda.
I love this video, my default is scotch and soda, and I loved watching the different tasting notes as well as how the lemon twist changed things for each. Another factor I love is what happens as the ice melts, and I will change what kind of cubes I'll use based on if melting heightens the yumminess during the drinking (of the drink) 😂 I am in awe of these long slab ice cubes you employ here, and would very much like to know more about them. Johnnie Walker Red is definitely the scotch and soda I will seek next time I'm ordering at a bar because of this. I mostly drink Famous Grouse at home, although when I'm poor Trader Joe's blended scotch is okay too. Better with a dash of lavender bitters though.

Thank you sir for introducing me to the scotch and soda. Probably my new favorite go-to drink. The tart bitterness of carbonated water really lifts the best parts of the woody, smokey, sweetness of the scotch. Definitely an acquired taste I think but a surprisingly good classic for a reason

I love the tasting notes. The history, and I've heard Churchill drinking story before but never grasped it was so watered-down.

I'm always curious about how various makers taste with the same drink, so I found this very interesting. Similar to how in a Gin and Tonic Tanguray Gin tastes better with lime, whereas in my opinion Beefeater Gin tastes better with a lemon.

@@howtodrink Yes, also I did some trials comparing Rye whiskey with lemon peel, compared to Bourbon with orange peel and vice versa, my tastes prefer rye/lemon with bourbon/orange.
I think I’d describe peat flavor in whisky as kind of like campfire, like definitely along the lines of what you’re talking about but I think diesel might be too far , I think it reminds me a bit more of burning wood on a campfire, the taste you get when you inhale too much smoke from it. Though everyone has their own tastes 🙂
