place a scratter above your racking area. feed Appel's in the top and let the must fall straight into the rack.

That would be ideal, but the geometry of the pressing room doesn't permit that. I'm looking into building or buying a pomace pump in the future.

Alan, do you expect to have a need for refrigerated storage? If so, have you given any thought to what you might do? I expect to face that decision next season. Thanks.

Wow, just seeing this. I have a very large chest cooler for now. If and when the orchard becomes productive, I'll improve a portion of the barn to be a walk-in cooler. Poured floor w/2" insulation. Spray foam on walls and overhead. Modified window box A/C for slow chill down with minimal power consumption. There is no commercial refrigerated storage anywhere around here :(

I see that you use 304 stainless steel to make your tub but what gauge is it? How thick is the sheet metal?
    Thanks

Hi Mike, I regret that I don't know! The tinsmith selected the thickness based on my expectations and it's worked fine. There are no open edges where I can slip a thickness gauge :( It's not terribly thick, but it holds its shape well because of the rolled edges and folds. I only take it out of the press once a year to clean under it.

I was considering building my own tray using polyethylene boards and glue.
    Your thoughts?

Prof.Kent I have not found a glue that will bond HDPE. It's usually "welded" using a hot air tool and filled with HDPE from a stick. Kind of like TIG welding. You could make one from wood and use a food safe coating on it... Good luck, and cheers! Al
