Canning Swedish Meatballs, and how I serve the finish product!

Canning Swedish Meatballs
4 pounds ground beef
2 medium onions
2 T. minced garlic
2 t. Salt
2 t. ground mustard
2 t. coriander
1 1/2 t. ground fennel
1 t. thyme
1 t. all spice
1t. cinnamon
1 t. Pepper
1/2 t. cloves
1/2 t. nutmeg
any spice you don't like, just leave out
I cooked mine in oven about 10 minutes
this is hot canning method, jars, water in canner, meatballs, and broth all need to be hot

2 cups beef broth
3 T. butter
3 T. flour
1/2 cup sour cream
Pepper
parsley
thyme

Personally, I like the small batch canning videos. I'm doing them more myself because it just is all around easier to manage. Thank you for sharing this!
One thing I always do with small batches is finish filling my canner with beans (I do the no soak method) it's quick and easy, and I always have a full canner.
Mrs. Lori, you encourage me. I have enjoyed canning all my life. Since becoming older, 68, I couldn't do the massive canning I used to. I will start doing small batches. Like you said, I can take my time. Little by little, I can make it happen! Love you Mrs. Lori.

Mrs Lori I can't even begin to tell you how you and Mr. Brown bring so much comfort to my life. Just hearing your voices make my brain slow down (except for the canning fairy that lives in my head. My aunt taught me to mix my meatloaf and meatballs with my kitchen aid mixer, Use the bread hook. It mixes it very well and it doesn't hurt your hands if you have arthritis.

I have arthritis in my hands and the way I mix meatloaf etc…with my kitchen aid mixer with my dough hook and set it on the lowest spread. Mixes beautifully and no mess on your hands.

Miss Lori…I’m praying you to retirement every day. I will say though that time will still be at a premium after retirement. Why you might ask and that would be we seem to want to do all the things kinda like eyes bigger than our belly mentality! But you and Mr Brown will be so happy retired together of that I know. As for canning and full pantry stuffing…I hope everyone is doing so because we are going to have some challenging days ahead! I grew up on wild game and thank God for that or I’m afraid we would have been having pretty skinny table fare. 9 kids get pretty hungry 3 times a day don’t you know. I LOVE watching Mr Brown and I will watch wherever you post it…almost! Looking forward to spring gardening with Miss Lori and many more visits with all kinds of content!!!:):):)

I’m going to try this, thank you for the recipe in the description. I wish I could help with the computer issues we have a store and a website but when it got to be more than I could handle we turned it over to a group that could manage it, all the new things are over my head and I just turned 60.
Just canned 4 pints of Swedish meatballs. The house smells so good. I had enough meatballs left over for dinner tonight too! I’m excited to taste them! Blessings!❤

I've tried canning (uncooked) ground beef and didn't care for it after canning. Please can you tell me if the texture of the meatballs is really good ? Is it dry at all? I'm hoping it's all good because I'd love to have some meatballs in my pantry. Miss Lori's recipes are always wonderful so I'm really hopeful. Thank you!

I'm sorry about the problems with TH-cam. I hear posters say they have a lot of problems with them. I wish they would get it together. In the meantime, Mr. Brown can use this channel. I can guarantee that we will watch him here. My favorite videos are with both of you in them anyway. I love the one where it snowed and he went outside and came back in and you had breakfast, talking about everything. I love the one where you were outside and cooked breakfast over a fire (sourdough pancakes) and the one where you made chili over a fire the day after Thanksgiving one year. I also love the one where you came home from work and made pork chops, fried cabbage, peas and okra and fried hush puppy bread. Then you and Mr. Brown sat down to eat. Oh, and the squirrel Mr. Brown cooked with water gravy and biscuits. As wonderful as you are here and he is there. Honestly, I think you are better together. God Bless.

We here in Massachusetts are having 60 degree weather one day, and today was 30-40 with high gusts of wind, rain, white out with hail, and now snowing!!! I’m happy you are going to retire. Looking forward to your retirement! It made a huge difference in my and hubbys life! We had to work until we were disabled, but now we work on our own time. Loving life, gardening, canning, seeing grandkids, helping others when we can. Just loving hearing the birds chirp and moving slow so we don't miss a thing! And enjoying your videos! I know you're counting the days until May. I did that before I retired too. I worked at our local school as a Paraprofessional and part time in Tech support for our elementary students. After almost 11 years I still miss the students! Love your channel!

Yes mam, i miss eating all that. My stepfather hunted all that plus my ex-husband hunted deer & we fished a lot. My son hunts bear & deer, his favorite is bear & he makes great meatlof from bear. Fried squirrel & rabbit i love, blessings 🙌

Allspice is the key ingredient in all the classic Swedish meatball recipies, my grandmother always made them with only mustard, salt, pepper and allspice. She had her grandmother's recipie from the 1870's.
And you are right that half minced pork and half beef is the traditional way

Im so excited for you, Ms. Lori being able to retire. You still have the ability to get around and enjoy your time doing the things you love most. I had to retire at 62 due to health issues. Im now 68 and still try to do all my gardening, canning, etc but it is getting harder by the day. May God bless you and Mr. Brown's new found life of enjoyment together. Praying for all things good. My Family ever Canned but my Granny did, Down here where it truly use to be All Country and now its like a City! My Granny also raised her own pigs as did other Family members living on the same lane! All SMITH'S! MY GRANDPA AND HIS BROTHERS WERE BOAT BUILDERS, BEAUTIFUL WORK! PEOPLE CAME FROM NEW YORK AND OTHER PLACES TO HAVE THEM BUILT! THEY WERE SO PRETTY WHEN THE OWNERS WOULD BREAK A BOTTLE OF CHAMPAGNE OVER THE BOW, PULL THE BLOCKS AWAY AND OFF THE Boat WOULD SLIDE IN THE WATER!!

My mom did all her canning in a water bath canner. We were never rich enough for her to get a pressure canner. She always taught me that if your canning stuff that should be in a pressure canner do it at least 2x as long in bath canner. And I am 70 and still kicking.
When I first got married, never canned before, my father-in-law water bath cooked his deer meat and salmon... 4 hours for 1 # cans. My mom gave me a pressure cooker for my birthday with instructions to not use it on stormy days or weekends. Why? I live on an island clinic closed weekends, can’t get to town hospital if it’s too stormy. All this because she never used a canner but was scared to death of them.
I'm so excited for you retiring in a couple of months!!! And can't wait to save up enough to get my pressure scanner and supplies. I used to help my grandmother can. It's the best way to have better food for your family that you know what's in it. It's just what everyone should do I think. My parents and grandmother are gone now but I know they'd be happy knowing I was carrying on the tradition.

I've never made swedish meatballs, and didn't know all those sweeter spices were in them. I'd love to see pheasant made. My dad used to hunt pheasant and rabbit (amongst deer and turkey), and I remember liking them. YT has been so glitchy lately, idk what's going on. I hope it gets fixed soon for Mr Brown.
