Great podcast !
I love his attitude toward AI. There's a lot of insecure artists who are terrified of AI and I just have 2 simple words for them: Level Up! The simple truth is AI is great at certain types of art and not great in others. For music, an AI will create an amazing baseline composition for a song and sometimes something really inspired, but it will not produce a great jazzy extended chord progression. It can sometimes venture out of safety zones and make something super weird and interesting. Getting better at writing beautiful and interesting things like extended chord progressions and larger themes but use AI for as inspiration and a well of crazy ideas and build on it.
Also fun secret to prompting, pick concepts like your throwing them into a boxing ring to fight to the death. Crazy things can happen when you add 'molten metal' and 'delicate analog warmth' to prompts.

The world for artists is kinda fucked (already and very soon), no doubt about that. I'm also somewhere in the middle where I think AI is so cool but at the same time I'm convinced it will destroy the internet/art and eventually society how we know it.
Don't give up hope. I think Bill said it well; it will make some people exponentially more creative. It's a tool!

It's ironic that he says he's allergic to basic song structures, cause his first couple or three albums contain songs that have almost the exact same formula over and over
I don't think that is fair to say as a criticism. He is literally admitting to evolving as a producer. We should praise and encourage that idea.
