If you have to cut the meat, you didn’t let it cook long enough it should be tender to the touch. I use the same brand also and I use a Dutch oven. I let it cook for four hours to the point I can take my barbecue tongs and tear it up with one hand.
Okay so first of all viria is made with goat not beef second what you making is not beer yet is barbacoa barbacoa is made with cow and third I would have put two bombs in it because you're brought looks weak I've been searching for this bombs and I'm going to go for whatever you tell me if you say it's good then it's good if you say it's bad it's bad it says me the time to making it from scratch because when you make it from scratch is a lot if you making it the right way like we do it in Mexico it's like maybe 10 or 11 ingredients it's hard including all kinds of peppers cinnamon apple cider garlic Man I kept going it's hard to do it but if you say it's good I'm going with you I like the way you talking I like the way you explaining everything some people don't know how to do videos like this you do so thumbs up good job 👍👍👍👍👍👍👍

why sear the meat in chunks? why not just sear the entire chuck and have it cook whole for the time?
