Really glad you're enjoying them :-) I'm not sure! I got them from a rip of the game's assets, I have no clue how I'd go about finding out who composed them. It'd be really interesting to learn, though, because the First Soldier soundtrack specifically feels different from the rest of Ever Crisis' OST.
None of the new tracks in Remake nor Rebirth is composed or arranged by Uematsu, save for "Hollow" and "No Promises to Keep". While this isn't officially confirmed yet, the same goes for Ever Crisis. Uematsu only composes theme songs now. We don't have an Ever Crisis OST yet for us to know who composed and arranged which track, but we do know from the credits in-game that there are at least 7 people contributing to the new music. Ryo Furukawa is seemingly one of the major ones and he has also contributed to Rebirth music. By the way, Keiji Kawamori is a veteran and has worked with Uematsu multiple times, and was also the bassist of The Black Mages band.
