    This looks so good that I'm going to make it this weekend! One little touch that I LOVE about your videos I've seen so far is that you pay attention to things like doing it in an order where you don't have to clean things in-between or use extra bowls/measuring cups. Some other cooking shows seem to think we want to be spending 2 hours doing the dishes after dinner but those little details make your videos so much more down to earth and relatable.

    in japan bought this little glazed small plate with ginger grater built into it, i.e. they fashioned the clay into a grater and plate combined. washes up easily, unlike metal micro-planes

    This might sound silly, but I don't think I've ever seen such white ginger. Whenever I buy it the flesh is always yellowish. Also, thank you for showing me so many uses for pork belly. Whenever I specifically search how to use it I always find similar recipes.

    Great vid, I've tried making Shogayaki recently on my YT channel. I'm completely new to Japanese cooking - so not as good as yours, but you've gotta start somewhere. It is super easy - and my kids loved it.

      He buys it. Looks like a Kewpie mayo bottle. The only real difference between Japanese mayo and the mayo you know is Japanese mayo has MSG in it. MSG is in no way harmful of bad for you, its just pseudoscience and bad interpretation, in addition to popular misconception, that people think its bad.

      @@CaseNumber00 A lot of regular mayo also has msg, so that's not it. The main difference is that japanese mayo is made with egg yolks instead of whole eggs and the distilled vinegar is replaced by rice vinegar.

      Yes, it's usually served with rice (and often pickles and soup, too). Japanese short (or medium) grain rice is definitely the preferred option.

    I wonder. Would it be ok to do this with chashu and use the chashu braising liquid instead of the teriyaki? Because I feel it's a shame that the only recipes I can find that use the chashu are for ramen.
