satoshiketchump I tried making his full version of Tori Paitan ramen. Took me 4 hours to cook and it blends the bones, skin, everything. It makes the soup turn white and very rich in flavor. It taste is like Tonkotsu ramen broth but lighter, as pork has more flavor in richness. Taste great 👍
This recipe is a good base for experimenting and you get a pretty damn good broth for something you can actually make without any planning. I made something similar but instead of putting in chicken skin into the broth, I crisped up the skin and used it as a topping. I usually buy my chickens whole or bone in cuts, so I can use the bones for the broth. The milk (or cream) gives the broth richness and the potatoes help thicken up the broth and give it that "body". This milk broth trick can also be extended to instant ramen too if you want a sub 5/10 minute meal.

Consider frying the chicken skin - the oil that naturally cooks out of it while frying is delish in a soup! (and chicken skin is supposed to render a healthier fat supposedly.)
Have you tried it? This is an semi-instant hack with ingredients that aren't hard to find, not a full-on 4 to 8 hours tori paitan recipe, it's inevitable to have less quality

TIP: Rather than using water + stock powder use reduced remouillage and skin from previous day's chicken. Very quick way to make Tori Paitan.

Its chicken flavouring...they usually come in cubes but can also come in packets pre ground.
