I have my Culinary Arts degree/Chef, and my favorite thing on the planet...is to watch/learn different recipes from other Countries...YAY! You are amazing! Your house must smell so good!     I don’t think people know that building a house in Mexico is easier. We built our house in Jalisco for $40k and it’s huge! Can’t wait to see how your house comes out!

      My parents are from mexico..and they told us, that if you buy any house or property there? It doesn't belong to you..and you can't fight for it there, cause their laws are not like ours😮

    Just a lil tip. My mama would say if you spread out the tortillas and let them dry out like 1hr before they won't use as much oil when frying them up.

      Another tip I've seen on YT, use day-old tortillas, they wont absorb toi much oil (kinda same as your tip tho 🤔). Also you can use paper towels to absorb some oil off.

      Esto es verdad. Para hacer mejor los totopos. Es mejor que las tortillas sean de un día anterior. Así al freírlas. No absorben tanto aceite

    Wow! You amaze me how being a young mom still put your family first in meals and everything. Congrats!..
    Your priorities are in for only success in your future. Nowadays younger generations feel they have to compete in everything and don't accept their role as a mother and responsibility of cooking healthy meals for the family for the well-being of all. Rather than take it as if they do that they a maid. They don't see further. As for the uncle trees , all you have to do is relocate them or maybe put them in with the ones they love so much more than you. There's always a solution, but I get it you just want peace and not get into a drama. I'm glad you seem to be just enjoying what you need and the blessings life is giving you and your family. Other things just stress people in competing and never happy no matter how much more they have financially.

    Wow those chilaquiles rojos look so good. My favorite has always been the verdes but you make those rojos look so good. I've been binge watching your videos since I recently stumbled upon your channel! My wife and I left TX (she's from Cancun) and we decided to live in Monterrey, MX for a year. After a year we decided that this is where we want to be. So we sold everything in TX and we're here full time. I love that you live in a ranch. I'm in the process of having land in a small town near Monterrey so we can grow our own food, have small animals and a water well. Monterrey recently became 2nd largest city in Mexico followed by Guadalajara, as much as I enjoy the city, there is nothing like country life. It's going to be a slow process working on our land due to our budget since we're paying a mortgage on our new home in the city, but slowly but surely we'll get our country life.     In California we got spicy nacho doritos, flamin hot doritos, flamas doritos and spicy sweet chili. My snack tonight were tosti-locos. Green salsa tostito chips with the japanese peanuts, cucumber, valentina and chamoy and lemon.topped with cueritos.. your snack looks good gotta try.

      @@PatriciaJaimes-j8b I’m pretty sure there are alacranes throughout Mexico. But in hotter climates there are more of the more venomous little “white” ones (los güeros), and where more temperate, the larger, less venomous black ones are more common. Even in the same region. In our Mexican town there are microclimates, depending on altitude, as the town is built partly in a valley, partly on the mountain. Our house part way up the mountain is always a few degrees cooler than where my sister-in-law lives in the valley. We only get the black ones, and she has both black and güeros at her place.

    OH! Erin! Your dream of having a rescue horse farm❤...so, not sure about this idea but I will share. I know people who buy race horses, but they retire when they are 4 y/o and under. I have been offered horses in the past...dirt cheap or free, but timing and life wasn't/isnt where I need it to be. These horses need homes...or...😢 things happen😢 They are higher energy but people who know about horses easily train them❤ They most likely would be coming from PA. Not sure of legalities on transfer? It came to mind so I wanted to share! Any animal would be blessed and lucky to be with your loving family❤ I know you arent ready for that yet but just planting the seed❤

    I’m a wimp when it comes to spicy food. But it sure looks good.
    Taking a bag of chips and putting cheese on it with jalapeño sauce is something I’ve never seen done.
    Interested to see the progress on your new home.

    The translator is funny it literally translates some words like “pumpkin” it said no sacudas la bolsa de calabaza” . It said don’t shake the bag of pumpkins!

    Wow. Soooooo exciting to watch the progress of your home. The chilaquiles look delicious.
    Do they cook "Morizqueta" at your ranch? It is a dish with costillas de puerco, queso, refried beans layed on top of a bed of white rice, topped with shredded cabbage, salsa and sour cream. Ohhhhh if they make it there, please please one day show us...... I love that stuff but nobody really sells it here in California. I tried making it and it was a flop.

    Buenos dias the Chilaquiles looked so good haven't made them in such a long time I would make little
    circle Omelets with Dried shrimp ( Cameron ) on top of the Chilaquiles and also fried eggs Whichever way they prefer their eggs so yummy Refried beans and bacon grease yummy you got me hungry now . lol So excited for you On your new home ❤ Have a wonderful day thanks for sharing look forward to your next video !!

    I live in New Mexico. My chilaquiles are made a little different. I saute chopped onions with the chips, then I scramble eggs with the chipsand unions. I then cover it all with red or green chili and top with shredded cheddar cheese❤

      That is similar to how my family cooks them except without the onions. Everybody has a different recipe. Mmmm this is making me hungry!

    Another new recipe for me to try! I desperately want that basket you take the lunch in. I’m curious about the fence and gate around the school. Is that to keep the children safe inside. If so, is there danger near your area?

    2:17 ten minutes? I have learned from my pastors wife to boil 30 minutes, no tomatoes and the sauce is not bitter. Thank you, I will try this next time. Of course I use dried up Long John’s from my home state of New Mexico. ❤️

      30 min is too long in my opinion. Maybe 15 min. Just enough to cook everything.

    Tus chilaquiles están muy bien. Solo falto. El toque de la cebolla. Cortada en julianas muy delgada. Para. Adornar junto con la crema y el queso fresco. Ponerle cebolla lleva a los chilaquiles. Al toque real original y auténtico. Do it. The next time. and We talk. You will see. 👌
