Yes they do. So we had our own separate buffet (which was very large!), as well as our own restaurants. We did not ever have to go to the non-vegan buffet (unless you missed the pre-fix dinner, or wanted a late-night meal). It was actually really awesome.
Ships certainly aren't eco-friendly. This vegan cruise definitely centered around health. Of course most of the vegans were extra mindful of consumption, waste, and recycling. Plus this is a European cruise line, so it's apparently a lot less wasteful than American lines (or so I've heard).
While I think a cruise is not for me (too many people and being out at sea for extended periods of time gives me anxiety) but a lot of people love to go on cruises and having the option of a vegan cruise sounds like a more environmentally friendly choice. We can’t be perfect in all of our choices, but we can do a bit better. It still makes a difference and it still matters.

I saw a vegan cruise in Norway, but I'm not sure if it happens every year (wasn't with this group). A European cruise would be fantastic!

See my comment below, but you'd never have to touch the non-vegan buffet. The main buffet did have vegan options just in case, we didn't eat there.
