I tried it out today ( I am a novice baker) but it turned out great! We can’t control our craving. I will save this fantastic yet simple recipe. I didn’t use vanilla and nuts, instead, I grated lemon 🍋. I also used Margarine instead of butter. I added 18g of baking soda, no baking powder early with the egg mix. The rising was impressive and the texture of a fantastic muffin instead of a spongy banana cake.

  • @TheLaNadine
    @TheLaNadine 4 ปีที่แล้ว +111

    Recipe:
    2 eggs
1 cup (brown) sugar (comments below suggest using 1/2 cup instead - I think you could use even less*)
    1/2 cup melted butter
    3 ripe bananas - mashed
    1 cup plain flour
    1 tbspn baking powder
    1 tspn baking soda
    1/2 tspn salt
    1/2 tspn vanilla extract
    walnuts - crushed
    180C - 45 mins.
*I made this with 1/4 cup sugar, and I added some ground cinnamon and nutmeg. While the cake cooled I melted some butter and brown sugar in a pan to make a caramel, then cut extra bananas and put them in the pan and let them caramelise for about a minute. I put caramelised bananas on top of the cake and drizzled a little bit of the caramel - I recommend you try it (you don't need to make much caramel it's more about the sweet soft but crunchy bananas on top that adds amazing flavour and sweetness). If I wasn't doing the caramel I would want to add extra sugar to the cake, but I think 1/3 cup of sugar would be enough, especially if you're adding a sweet frosting - speaking of, a cinnamon cream cheese frosting would be so good with this.

I tried this, and it turned out very well. I put less sugar because I thought it would be too much, but I think I'll use full sugar next time as I would have liked it sweeter and see how it goes. I didnt have walnuts so will add that next time I make this. But everything else I had. Overall I'm very happy with the way it turned out. Light and spongy. My husband and our friends enjoyed also. Thank you for this recipe. Look forward to trying more of your recipes :)

Just finished baking this aft seeing so many successful attempts in the comments section. It turned out fine & only took me 30 minutes. However i only had 2 bananas & salted butter. Here's my take:
    Recipe
    2 eggs
    1/2 cup brown sugar
    1/2 cup melted butter
    3 bananas
    1 cup plain flour
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon vanilla extract
    For extra flavours
    Ground Cinnamon
    Nutmeg
    Walnuts
    Dark choc chips
    Preheat oven for 10 minutes
    Beat eggs til foamy.
Add sugar and whisk until incorporated.
Add melted butter into egg mixture and whisk till incorporated.
    Mash bananas.
    Add bananas into egg mixture.
Add all dry ingredients anvanilla extract. Stir until incorporated.
Grease 8”(21cm) cake tin with butter.
Bake for 45 minutes at 180 degree celsius in oven.
Run skewer test every 5 minutes from the 10 minutes onwards. (my oven is too hot so i baked this for only 15 minutes. switched to 150degrees for another 5 minutes).
*her cup weighs 100 grams (HMMMM.. therefore explaining 100g plain flour only in my recipe...... will convert to grams in the future using this www.kitchenproject.com/Metric.htm)
    *white sugar is fine.
*you can sub butter with vegetable BUT NO GHEE
*if no baking soda, replace plain flour w self rising flour.
*wholewheat flour is fine too! less tasty but less calories too!
*microwave oven is ok (4 minutes on FULL power).
*pressure cooker: Cover the base of pressure cooker with sand or salt. Put a stand on that and heat it for 5 minutes. Then place the cake tin with batter on the stand. Close the lid, dont keep the whistle. Bake it for 20-25 mins on medium heat. Open the lid and run the skewer it should come out clean then the cake is ready. Take out and let it cool until it reaches room temperature. Hope it helps. Let me know how it cane if you tried.Read more
