Kaki Meshi (Japanese Oyster Mixed Rice)

  • Japanese Oyster Mixed rice with canned smoked oysters in spring water
    (Cooking time) approximately 2hours
    《For 4people, you will need》 1 tsp=5ml, 1 tbsp=15ml
    360ml short grain rice
    180ml glutinous rice
    600ml water
    carrot
    3 mushrooms
    2 canned smoked oysters in spring water (Woolworth)
    1/2 cup peas
    (Seasoning)
    1 tbsp salt
    1 tbsp katsuo dashi (Japanese powder stock)
    3 tbsp Sake
    《method》
    1. rinse rice 4 times
    2. place rice & water in pot and leave it over 30mins
    3. cut carrot & mushrooms
    4. add seasoning and canned water into pot and stir
    5. add carrot, mushrooms and oysters on top
    6. bring to boil with high heat (about 8mins)
    7. reduce the heat to low and simmer for 8mins
    8. turn the stove off and leave it for 20 mins
    9. open the lid and add 1/2cup cooked peas
    10. mix well and enjoy!
