@@dilemmix I use Pamela's Artisan gluten free flour. I just used vegetable oil and put my fire on mediumand stirred for over an hour before it got to the proper color. I got it to the color of milk chocolate, with Gluten free flour you have to cook on a lower temperature. I used a flat wooden spatula, non rounded spatula and sometimes the flower would Chunk Up so I would use the flat edge of the spatula to mash out lumps. Prior to getting my roux started however I cut up an entire onion, when the roux was finished I put the onion in to Brown the onions and to cool off the roux before I started making my gumbo
Any taste difference between this and a roux made with all purpose flour?
