    CarbQuick has both wheat and soy. For those who are following a ketogenic diet and who want to stay in ketosis, wheat is too high in carbs and has gluten to boot. You can make your almond flour even finer by blitzing it in a coffee grinder. I've made a delicious roux with it using melted butter instead of the seed oil. If you want good health, sometimes you have to train your taste buds to appreciate different flavors.

    Dang.... I was hoping for a miracle. CarbQuick has a wheat base. People with wheat allergies cannot use this.

      Maybe lupin flour or unflavored protein powder. I’ve heard that sodium citrate is a good keto thickener

      I’m glad I saw your video before making a big pot of gumbo with almond flour. We have to go gluten free so can’t use CarbQuick. Will look for more of your videos to see if you’ve found something better. Thanks!

    I made one with coconut flour and it was fine as long as the gumbo was hot. Once it get to room temp it’s no good. I’ve just been using okra.

    You can use xanthan gum to thicken gumbo after it cooks

      Something that shocked me was I cleaned the gizzards in cold water but left them in water overnight. I think I was tired when I was making them. Anyway I guess the water made them huge like a butterfly effect. Scared the hayle outta me 😂

    Carb Quick sounds like something I'll need to get in my pantry soon! I just got Xanthan gum and having so much fun making new recipes! Mainly using Xanthan gum and coconut flour atm for what I need, ran out of almond flour and I'm surprised to say I feel like I can do without!

      I BOUGHT XANTham gum and forgot for what i was going to use it for... can you just post some of the uses and what recipes you use it for..thanks.....i used xantham today for a bechamel, ill never use flour again..but i remeber i wante dto make so many different recipes with it..and i just forgot..

    Have you tried adding a touch of peanut butter, or nutmeg or something else to increase umami and nutty flavor? Tahini Paste may be a better option because of those with peanut allergies .

    I recently tried to make a roux using whey protein powder based on a website I found, to try to thicken gravy while making beef bourguignon. Given that the beef needed to simmer in wine & beef stock for 2-3 hours, it didn’t make sense to thicken at the beginning. I also reviewed some info on a bulletin board that said you don’t want both the gravy & roux to be hot, so I cooked the roux and let it solidify then added it at the end. What a disaster. The gravy was sandy! Hopefully, this method will work better?

    The Carbquik you are using looks like it is a light off-white color. I bought some from Walmart and it is a kind of dark tan or almost yellow color. Is my screen playing tricks with the color, or is your Carbquik a light off-white color? If so, where did you buy it? I

    At 5pm I finished my gumbo using Carbquik and let me share my findings.
    I followed some of his gumbo techniques and some of my own.
    2/3 cups oil
    1 cup Carbquik
    I always sift flour and Carbquik stuck to my dry sifter.
    Oil in cast iron was heated until I saw a light smoke coming from pan.
    At the 30 minute mark in my cast iron pan the Roux had a super rich dark looking almost black color but never thick. I used his meat slurry idea in the hopes it would get thicker.
    It had a mild flour smell.
    The taste was okay but still tiny little grainy pieces like when using gluten free flour. So far gluten free flour has the same taste as AP flour for a Roux but still tiny grainy pieces.
    The Carbquik gumbo is okay but my 5 kids have not tasted it yet. That will be the real test. If they don’t taste a difference then I might keep this stuff for future roux recipes 😉
    Anybody have some freezer friendly baking recipes using carbquik?

    I feel your pain, but this stuff isn't great for clean Keto with soy fiber, canola oil, sucralose, palm and palm-kernal oil, and natural flavors in it.

    Carb Quick is modified wheat flour. This probably also still has wheat gluten.

    I just saw the keto twins use a new ingredient for mashed potatoes... Natural Heaven hearts of palm creamy mash. They're a little pricey but I think they might be a good substitute. The keto twins say they don't taste like potatoes, you add other ingredients to make them taste like potatoes. They're basically keto instant potatoes. I'm not crazy about carbquick because of the wheat base and canola oil. Why do they sell products that are supposed to be keto friendly but have questionable ingredients.

    Carbquick ... genius! It must be the gluten that thickens then. CB has as much gluten as normal flour. The starch must be what's causing flour to taste better than CB, since CB obviously has most of the starch removed.

    If memory serves, I think Carbquick contains soy and is bad for those with Hashimoto's Hypothyroidism. I haven't used it since very early on in my keto journey because of that. Might be bad Intel but it's what I have.

    My wife uses Fava flour. Makes a nice roux in 5-10 minutes.

      You can use pretty much any oil that you enjoy, whether it be butter avocado oil, canola without hexen

    You added way too much xanthan gum. You should use less than a tablespoon per 1/2 cup of oil or butter. I’ve made dozens of rouxs with great success using xanthan gum.

I happened on your channel while trying to find a good breading for my oysters - I’m making oyster po boys tonight. Your channel popped up with your shrimp po boys. Anywho.     Although this might be great for keto folks, carb quick will hurt Celiac people as it is not gluten-free and full of wheat products.

      Jaja, it's a Biscuit and Baking Mix that's made with Carbalose flour. I buy it at Walmart, it's around $7 for 2 lb which is a pretty good price

      It's a wheat based biscuit mix with canola oil in it. Until I went keto I used canola oil to cook with. I have found out that canola oil is a BAD vegetable oil. Cut it out completely.
