Papaya has an enzyme, papain, that breaks down proteins. When the Spanish conquistadores arrived in Tenochtitlan, they were received with a big feast. They had indigestion, and the natives brought them papaya to eat to help with the indigestion. Get yourself some raw papaya and put chunks of it with its juice in a bag, add the toughest cut of meat, and it will tenderize it like butter overnight.

My grandparents lived down the block on 3rd. The 3rd Ave. El ran right outside their apartment window. We used to get to go to Papaya King as a treat - this was around 1950 - 1953. The documentary says it was renamed “Papaya King” in 1963 - but I remember it was always called “Papaya King” a decade earlier - I learned the name of the place when I was about 5 or 6 years old. I haven't been to Manhattan since 1957 - but if I did, going to Papaya King would be one of the main reasons to go there. And maybe the Met - but if I only had an hour or so, I'd skip the Met, and go to Papaya King.

Circa 1991.. I was 20 and had just moved to the city to become the worlds best musician.. I stayed at a pretty grimy YMCA residence on 24th and 7th Ave. There was a Papaya King across the street. I survived on the 2 hot dogs and drink for $1.99 and a multi vitamin a day for 6 months… enjoyed every bite…

My cousin Mr Sum Yong Wang owns a hot dog stall in China also. His meat products are sourced from pests and insects so are very sustainable and low impact on the environment. This allows him to keep prices low to feed low income families at minimal cost. The most popular item is the Crazy Wang Deal which includes a McWang Dog, Fried Rice and bubble tea drink with extra pearl.

      New York hot dogs? garbage.
      Chicago hot dogs? way better.
      New York city? trash.
      Now, let me explain why.
New York hot dogs are all fluff and no substance. The sausages are small and bland, and the rolls are always too soggy.
Chicago hot dogs, on the other hand, are a masterpiece. They got the juicy, all-beef frank. They got that perfectly grilled onion. And they put everything right on top of a poppy seed bun.
Chicago dogs are where it's at.

There's a food truck her run Central Florida that does a similar thing, but with a different take on it. Place is called Kona Dog, and they offer hot dogs in a sweet bun that's been hollowed out from the top and your choice of sauces, including a selection of fruit or fruit mix ones like coconut, pineapple, or mango mustard. Sounds/looks a look unusual but it's delicious.
