I just cooked the One-Pan Mexican Chicken and Rice recipe tonight for my family, but instead I used beef and added corn, black beans, chopped green onions, chopped red and green bell peppers and white onion, and mild green chilies. Then followed the rest of the recipe as usual. I added guacamole and sour cream to my bowl, and it was Soooo delicious!!! My husband was still singing me praises an hour after we ate. And my toddler ate it, too!! Definitely a favorite in this house!! ( I also tried the Tuscan Chicken recipe a couple of weeks ago) 😁. @JessicaO'Donohue You and Bunky have introduced me to several delicious recipes through your channel which I've made for my family, widening our meal options in the process. Thank you Soo much!!! When I feel like I'm in a meal rut, I turn to your videos for delicious suggestions and inspiration. ❤️
I make a Mexican rice casserole kind of like that and add black beans and corn. I also like to saute onions and poblano peppers with it as well. So good!
I'll have to try out the Tuscan macaroni. Looks delicious!

I've been cooking for 45 years; always use the instant rice over the long-cooking rice; the taste is the same, with much less wait & trouble! 😊

I love your hair band. I love the way your hair looks!! I'm so sorry about your allergies, and my husband can surely relate to you! We live here in Tennessee and the allergies have already kicked in!! I really really wish we could have got one major snow this winter 🙃! Daisy Mae's such a delight to watch! I have a chihuahua named Katie, and she watches my every move in the kitchen too! If she is sitting with my husband in the recliner, and tell him that it is ready, she is the first one to jump down and come running to the kitchen! 😂♥️ I think dogs just make a home so complete!! ♥️
I love that Daisy Mae loves cheese. My dog Rosie can hear the cheese bag from a mile away and comes running. She runs in when she hears that drawer in the fridge open. 💖 she knows the cheese is coming out!

We had a cat that loved tuna. Every time she heard the can opener she would come running to see if we fixing a can of tuna for her.
Both of those dishes made my mouth water. Newman’s own salsa is our favorite too. I’m on low sodium diet and it is one I can have. It’s just so fresh tasting. Hope you feel better. 😊❤
JESSICA, I use the chicken tenderloins all the time for my recipes especially my chicken salad. I use that boil in bag all the time and it does take about 10 minutes to cook.

One of my sons doesn't like onions and bell peppers so I use kitchen gauze. I cut the onions and peppers up and tie them up and put them in the pot or casserole. The Flavor is there but he doesn't have to pick them put.

Since the first of the year I've been suffering from the dramatic weather changes. For several of the weeks I've actually had a cold and when I start to get better, the weather changes again and the cold is back full force!
I saw my doctor again last week and was put on a new round of medicine. We had a pleasant weekend but the temperature is dropping again and we are supposed to have rain tonight. I was feeling better again yesterday but got up with more congestion today. I often refer to my home state as being bipolar but now it just seems to be Mother Nature!
Hopefully we'll all feel some more consistent weather within a few weeks!
One of the best things you can do for allergies is to have a spoon of honey every day! But the honey needs to be grown in your area to effectively fight your allergies.

I make something similar to the chicken and rice but I add black beans and frozen corn.
These both look soooo good! My son has a recently diagnosed dairy allergy which break my milk/cheese loving heart. So may need to try this out with some modifications. Lol, it was like Bunky was accepting an award with the pepper grinder 😆

Oh my goodness Jessica that is so something I would order from a Mexican restaurant too. That recipe looks to die for. I can't wait to make this next week. Roughly how much chicken did you use? I think I would add maybe some diced avocados to it or guac to go with it. lol I also think for the shredded cheese I will be using pepper jack. :)

Oh, my word! I saw your post that said it had been up 52 minutes. Well, I was trying to figure out what to make for dinner. I ran to the kitchen and had everything but the spinach (next time!). Anyway, it was DELICIOUS! Thank you for sharing this! My husband thought maybe it had mushrooms in it. He never could figure out what the sun dried tomatoes were. He the thinks he doesn’t like them a lot of the time. I sliced them up. Ha! He loved tonight’s dinner!

Everything looks delicious as usual! ACP is my go to when we go for Mexican as well. I’m thankful for these warm temps but the crazy temp swings are messing us all up. ☺️

@@tinaboles1957 Not stupid at all! I just had to look it up. 😂 Arroz Con Pollo....I'm not sure what is the norm but I think it's chicken and rice smothered in cheese. I always get an ACP burrito and that's basically what's in it....that sounds kind of boring but it's so good! 😂

Can this old lady make a suggestion? You don’t like putting onions in your meals but they really add so much flavor! Have you ever considered mincing your onion? You can put onion in a food processor and turn it into a paste to use just like the garlic you use! Try it! What have you got to loose? You might find you like them that way!
