- I'm ecstatic today. Thanks to Nathan Peterson, I made #BucatiniCarbonara for the very first time. It's one of my favorite pasta dishes in the world, and I've eaten it across Italy on multiple trips abroad, but there's nothing quite like the satisfaction of doing it on your own. What a day.

Bucatini Carbonara

Yield: 2 to 4 servings
Ingredients
Kosher salt
8 ounces dried bucatini pasta
1/4 cup extra-virgin olive oil, plus more for drizzling
1 cup diced pancetta
Coarsely ground black pepper
2 large whole eggs plus 1 large egg yolk
1/2 cup grated Parmesan
1/2 cup grated Pecorino-Romano, plus more for serving Active: 30 min

Bring a high-sided pan filled with water to a boil. Season liberally with salt. Place the bucatini in the water.
Heat the olive oil over medium heat in a large saute pan, then add the pancetta. Cook until the pancetta has rendered and the meat is caramelized, about 3 minutes. Add a ladle of pasta water to stop the cooking process and let simmer on low heat, 2 to 3 minutes.
Meanwhile, whisk together the eggs and egg yolk in a bowl. Add the Parmesan and Pecorino-Romano and whisk to combine. Slowly add a ladle of the pasta water to temper the eggs. Set aside. When the pasta is al dente, add the pasta to the pancetta pan straight from the water. Remove from the heat and add freshly cracked pepper to taste. Add the egg mixture and toss gently to coat. If the sauce gets too thick, add some additional pasta water. Garnish with a generous sprinkling of Pecorino-Romano and a drizzle of olive oil.

Agree 100% about the superiorness of bucatini. The sauce can get into that hollow center and just add another dimension to the flavor. Nice job on this cook!

Great video, Sean!!! It's a new recipe for you to keep and use! Speaking of compliments while cooking, my best compliment was when I brined and smoked some chicken for the family. It came from my sister-in-law who stated that my brother is a condiment person and he wasn't using any condiments on the chicken. She said that she's never seen him not put a sauce on something. I think I was as proud of that as you are with your compliment from Aly.

Ayyyy you a fuckin' nailed dis a one Seany Bucatini (your new nickname). Carbonara is my go to pasta dish when I "have nothing in the fridge". I mean...I always have dried pasta, parm, eggs, and at least bacon. One tip...once the guanciale starts sizzling...add a bit of water to coat the pan. It'll render out more of the fat and you get crispier bits. Also reserve pasta water and mix it all in the bigger pot. Really get after it...the cheese, fat, and egg gets so much more creamy.

Noodles with eggs and pan fried pork....Breakfast Spaghetti. Finally a pasta I can eat in the morning, I mean something that isn't a cold leftover. One question, a recipe that calls for pork jowl or pork belly.....wouldn't bacon cover it? Have great weekend Sean.
Bacon works! It's just not the same quality as the guanciale. Also, I really wanted to honor the real-deal recipe that Romans use. I can always sub bacon when I wanna keep it cheaper and quicker.
It will be really similar, just will have extra smoky flavor (guanciale isn't smoked and is somewhat less salty than bacon too.)

Thanks for not f*king carbonara as we are often used to see happen outside of Italy. You definitely did a good job, and kuddos for doing that without a crew of people. I'd rather eat yours than theirs. Just a mom's tip, be careful to not let the guanciale have a lot of burned fat, those little black thingies you see in the fat, cos it's not good for you, when they start burning, turn the heat off. Small pieces of guanciale makes for an easier and faster fry and less of the black thingy. Easier for the teethless grannies to eat as well 😂.
