Hi basically i have an important question I want to use a commercial size cooking pot 30 to 40 inches, I want to use it for commercial cooking to avoid and leaching toxic activity, what will heat the pot would be a 32 jet burner stove which there use in resturant what grade would you recommend and most importantly to stay away from. Bare in mind this will be everyday usage. Thanks

Sir The chemical composition of ss 403 martensitic and ss 409 ferritic are very close.There is not much difference.I heated 409 ferritic ss to 910 degree centigrade and quenched. Fortunately it got hardened to 25 RC

I have heard that the reason austenitic steel is not magnetic is because the nickel and chromium keeps iron in its gamma state. Gamma iron by itself is reached at the curie temperature which is how hot the iron needs to be to lose magnetism temporarily. Beta iron and alpha iron(most common atomic structures of iron) are both magnetic but gamma iron is not magnetic.
