Best one for making a knife would be martensitic stainless steel, because of its hardened martensitic crystal structure. Its very hard, not ductile, so tour knife will stay sharp for longer.

Such a great animation! Expensive. Narration really required for a topic like this. From a Training development POV, what are the end products made? What is a Henkle knife vs a turbo jet fan blade? Explain like the audience is a third grader. Basic language, simple analogies and the like. If it was my gig, I would make five shorter videos.
I have machined all these steels. duplex f51 is difficult to chip. all soft compared to the inconel range... now we're talking. 718.....625... mega steels.

I suppose you are not intending to cover all grades but not including 310 / H7 is a bit of a mystery. It is the highest alloyed grade with around 25% Cr and 20% Ni.

200 grades are less strong and corrosion resistant than 300 grades. What are you trying to do with it? That's the important thing. There's a perfect steel that matches what you're trying to do. It's not always as cut and dry as "What's the best quality?" Depends on what you're trying to do with it!

You are asking for competing qualities lol. If it holds an edge longer, that makes it harder to sharpen. If you want it to hold an edge longer, it won't be able to be sharpened as sharp. If you want it to be corrosion resistant, you will have to reduce the ability to get any of the above qualities. For somewhat of an actual answer, Leatherman uses 420, 440, and sometimes 154cm in their blades, and I have never had any complaints.

Very much increases. It's sea resistant so boats should be made of this stuff.
