+sabresister Or you could try cashew or almond butter if you're not allergic to those. I've not tried it that way but I would assume it would work just as well.
One question : Since you're saying the noodles should be "cold," how do you keep them from sticking together while they chill? I assume you cool them down in the fridge, but in my experience, noodles get all sticky when I do that. Any suggestions?

You can always toss them in a super light coating of oil.
I've never even heard of spicy peanut butter. I'd just use siracha.
