I did this tonight & I used boneless skinless chicken breast & it turned out great but next time I think I'll do the bone 🍖 in chicken. I sautéed the chicken in the bottom of my dutch oven w/ seasonings, made that fond & it was good.

Laura, My husband doesn’t like spicy foods, I do a little. I bought the mild version of green chilis instead. What can I use for my portion to spice it up a little? Also, can I use thighs & drumsticks? Thank you 😃
Try using Mexican Oregano instead of regular. The flavor of Mex. Oregano is much more citrusy and works so much better with this flavor profile IMO. Seriously, it has become my not so secret ingredient.
That looks amazing. I don’t know if you can get fresh fire roasted chili in New Jersey. It’s big in Colorado, Arizona, New Mexico, and California. It will take this already amazing recipe to a whole new level.
Laura - what are your thoughts on your Le Creuset & Staub Dutch ovens? Do you prefer one over the other? Pluses and minuses? I’ve used my Le Creuset for years, but I’m thinking about getting a Staub, too. I’d love to hear your thoughts and advice - thanks!!
hi @Calm Mind, I have owned a Staub for many years and highly recommend. Love that the enamel inner is black, so there's less concerns about staining (esp if you cook w/ tomatoes & turmeric) ... and the dimples on the underside of the lid are designed to hold the condensation when lid is on...avoiding that re-dripping of water vapor when the lid is flat. Love the color of Laura's here too :) I have the dark red in 7 qt.

I’ve made a white chicken chili with boneless, skinless chicken breast before and it was delicious 🤷🏼♀️ I actually prefer it with that now.
Chicken breasts are delicious, but they’re not as flavourful as chicken thighs.

I use a can of green enchiladas sauce instead of the taco seasoning! I think next time I’ll try both! Yum!
I grow Cubanelles every year. Because for me, the flavor of them puts traditional bells, which I grow also, to shame! Great recipe!
