Mango Shrikhand, also known as Amrakhand, has a gorgeous colour, flavour and aroma and is prepared with hung curd (yogurt), Mango pulp and sugar as main ingredients. It’s hard to resist the temptation of this lip-smackingly good dessert. It is served with hot puris, but can also be enjoyed with chapatis or on its own on festivals, special occassions or just when you fancy a treat. For all those Shrikhand fans, Amrakhand is like icing on the cake 😊

    ★★★ Mango Shrikhand ★★★
    ➤ Serves: 3-4
    ➤ Ingredients:
    • 2 cups - Greek Yogurt (Thick Full Fat Curd)
    • 1 cup - Mango Pulp
    • ¾ cup - Sugar - powdered (or to taste depending upon sweetness of Mango Pulp)
    • ¼ tsp - Green Cardamom (Elaichi) Powder
    • Some - Cashew Nuts, Almonds, Pistachios - finely chopped
    1 cup = 250ml, 1 TBSP = 15ml, 1 tsp = 5ml
    ➤ Method:
    • Place muslin cloth over a colander/strainer which is placed over a bowl and add Greek yogurt (Thick full fat curd).
    • Tie the cloth and place heavy weight over it.
    • Keep this in refrigerator for at least 10 hours.
    • After 10 hours heat Mango pulp in a pan on low setting stirring continuously.
    • Cook till mango pulp reduces down to a thick sauce. Be careful not to burn yourself as it splashes and is very hot.
    • Let this cool down completely.
    • After Mango pulp has completely cooled down, remove yogurt from refrigerator, untie muslin cloth and place yogurt in a bowl.
    • Add powdered sugar, cooled Mango pulp, green cardamom powder and mix well.
    • Refrigerate again for a further 2 hours before serving.
    • After 2 hours, add some Mango Shrikhand in serving bowl and garnish with some finely chopped cashew nuts, almonds and pistachios.
    • Enjoy with some hot puris!
