    Dredge some of your squash in egg, then flour or cornmeal, flash freeze, seal it up in baggies. Then during the winter fry you up some in some avacado oil with some onions.

    Me and my guy have been so blessed with zucchini and squash! Our garage fridge has a full shelf and door full and we saw a small wheel barrow full in the garden needing picked! So happy to see this recipe, I can’t take up freezer space and I get so annoyed with how everything “random & extra” from the garden is always suggested to be canned as a daggone relish or with loads of sugar 🙄I want to have more options than just dessert or relish! Like adding to meatloaf and meatballs and breads and whatever my heart desires! Thank you so much I bet we will be able to accomplish this on Wednesday as long as I can find 15lb weights!

    Last year I canned yellow squash with potatoes and it works great for frying together or in a stew.

    I follow Old Alabama Gardeners zucchini and squash canning method. No shredding.

    Another canning job well done! Next year, I'll have to can some of mine this way. I have an old canning book from the 1970's that has a recipe for canning summer squash that I've used for years and years, only the squash is canning in chunks or 1/2" rounds. I do about 1/2 of it canned and the other half gets dehydrated. No matter how we do it, it gets preserved and eventually eaten and that's what counts.

    We purchase canned vegetables at the store. Not sure why not summer squash except possibly the texture. You are right

    99% of gardeners grow zucks. Why have they not trsted this ive canned mine with a little pineapple juice. Good for so ,uch stuff makes great pancakes, cakes. Breads, everything. Love your channel Bev❤

    Mine didn’t do very well but I have a few cups shredded and frozen.I DO have 3 honey butternut though and a whole lots of tomatoes so all is good.

    I canned zucchini with tomatoes . I would use it in any thing using canned tomato. I would purée it and use it like tomato sauce and no one was the wiser

    🤔I can't wait until you get into the yellow sqwaush that haste unruly ones with the really raised bumps...mine get tough & stringy when the color has changed to that really deep yellow color (not sure the outcome when pressure canned...please share feeding into Howie 1😉

    I am planning on doing this next week. Grand daughter's birthday party preparations are keeping me from attacking a large laundry basket of zucchini and yellow squash. Not sure how many more shoes will be waiting for me at the Kids' house.

    Why can't you use zucchini for pumpkin pie? I made so many things with zucchini.
    Pancakes, fritters, breads. Noone knew it was there.
    I never thought to use it like apples or pumpkin

    Water has to be in the canning jar or it is dry no matter how you can it

      There is water in the canning jar in the form of the water that is being pounded out of the zucchini

      This is not dry Canning! Dry canning is in the oven I do not dry can! This is called, dry PACKING. There is water in the pressure canner that I am canning with.

    Probable the texture because squash gets mushy cooked too long . I’m guessing.
