      MrPaulinmi Thanks my friend. This recipe is usually made with fresh corn, but tonight I had a few more friends to feed so I took a very good short cut. Awesome flavor. Aieee!

      keith bettag Keith, the crawfish fat and the corn juice makes this dish "out of this world" my friend. I wish I could have gotten hold of some fresh corn like I did in the 90's when I first made this meal in Des Moines, but it just didn't work out that way. Aieee!       lonestarrider LOL! I don't know where grandpa got the corn. Aieee! There wasn't any evidence of corn in his house the next day. It all got used up by old Fontain. Aieee! LOL!

    Sitting in the freezer is a one pound package of frozen crawfish tails. I think if I wait another month or so until the corn is ready for picking, I can then use fresh corn from farmers market and make this. I've been wondering what I should do with those tails, and now I think I have it figured out. Thanks Chef, this looks fantastic.

    have made this type of corn before, love your version, can not get good crayfish up north, will try this with shrimp

      doublejbbq Thanks my friend. Yes you can use shrimp in place of the crawfish, I've done that version many times. Thanks for stopping in my friend, and if you can get fresh corn or a small niblet corn it will be even better. Aieee! Take care.

      Ted Chef Bourque When making with shrimp, do you still simmer for 30 mins ? I would think that the shrimp would become rubbery.

    I like your recipe. I would use corns off the cob if possible and some a dat bacon juice and real butter which nowadays they say is better for ya. YUUMMMMY
