I love this so much that I started doing it as a main dish. 40 oz pork and venison sausage 24oz corn 1 Tbs Slap ya mama seasoning 12 oz onion 1oz garlic 12 oz bell pepper mixed orange and red 4 oz poblano pepper 1 cup chicken broth 1/4 cup cajun power garlic sauce 3/4 cup heavy cream It's a tasty, tasty dish!
I just got a ton of fresh sweet corn from a farmer. Now I know one of the things I will do with what I don't can up! So glad I recently discovered your channel. Your recipes speak to my heart!!
I've watched this about 5 times as I'm chopping my preps. I don't know if salmon is a great pairing, but it's what's for dinner. I'll let ya know how it turns out. Thanks again for the recipe.
I’m making this for supper tonight and all I can say is WOW!!! I didn’t add the jalapeño pepper but even without the heavy cream, it’s fabulous! If I don’t get away from the stove, there’s isn’t going to be enough corn left to add the cream. Thanks for sharing.
You could use a bundt cake pan. It gives you a place to stand the corn cob on, and the kernels fall into the pan. I've done that. Its also pretty common to strain and keep bacon grease. I love making corn maque choux and potato salad with left overs from crawfish boils.
thanx for your strait forward shows,no 30 minutes of BS ,just good recipes,,a lil helper on the corn, put a smaller bowl top down in the bjgger bowl then stand the cob on it, makes for a safe way to decornel yo corn,
Have you ever tried Maque Choux?

Thanks for the input.
That looks absolutely amazing!
Thanks!
Cajun corn is delicious. Cutting all the corn off the cob is an underrated trick. So much on that cob goes into the trash.
Another reason to milk it. I do love it!
Good recipe. Try it with shrimp and fresh cherry tomatoes, and then you got yourself a damn good main dish!
You are fun to watch!
Thanks!
I bet your Machu will be awesome on tacos, enchiladas or in burritos… on and on! Whew 😅🎉
Thanks, Chris!
For maque choux, I usually use Tasso pork for flavor. To me it’s essential.
I love Tasso ham. So good.
Side dish? I've used this as a meal!
Sounds great!
No garlic???
Go for it. Garlic is a wonderful thing.
It’s pronounced;”mock shoe”. And it’s not steed corn, it’s smothered corn.👍🏼
Glad you were able to join!
Sorry Bud but yours is not new.
This is an old school dish, bud.
