Since following you we have lost (hubs) 120 and (me) 60 pounds and come off all meds, he has conquered prediabetes and we both beat high blood pressure and no longer take statins. I will try this recipe and maybe even use real potatoes since I have never found cauliflower to be good as a mashed potato substitute. I may try your version but after 2 years of clean eating, I do believe a body can overcome a few "cheats" in life. Thank you for the encouragement to change our lifestyle, show us the good stuff, and get healthy at 69 and 65, respectfully. We do love the Siete chips so we can enjoy a tasty plate of keto nachos grande!

Steam cook the cauliflower in chicken broth for more flavour. Also add fresh ground black pepper. If the cauliflower mash is too watery, reduce the mash in a skillet.

I would suggest steaming the cauliflower to maintain more of its nutritional value, than boiling it.

What country is that pan made in ?
On the past I would use red meat.. I'm wondering if this one I could use chicken? Any thoughts?

Here's a video idea. Carbonated soda options. The best options available and where to get them. I have to have my soda. I will even drink up to a 2 liter a day on top of a gallon of water plus other drinks. Zevia is expensive and bloats me. I hate it. I like olipop but 2$ a soda is ridiculous for something that small. So right now i just do diet soda. I used clear american for the longest time but i think they changed the formula. I believe the preservatives in sodas are making my neck swell. So i need a new alternative that doesnt have the preservatives and doesnt cost an arm and a leg. I dont care if there's natural cane sugar in it. I just have to have my carbonated flavored beverages, and it needs to be something that doesnt make me feel like complete crap physically.
I used cream cheese instead of parmigiana cheese. Really rich and creamy

Lets do the math:
You substituted mashed potatoes (which is roughly 100 cal per 100 grams) with cauliflower (25 cal/100g) so you saved roughly 120-150 cal per serving
But then you added half of stick of butter (because you can eat mashed potatoes in Shepard pie without butter, but you definitely cant cauliflower - cuz it tastes ugly) so you added 400-420 calories with it. Nice.
Next. Instead of browning ground beef to obtain most of the flavor through Maillard reaction, you just boiled it together with vegetables.
I'm pretty sure it tastes much worse than proper Shepard pie and gone not so far in terms of amount of carbs.
Daughter is adorable though =)
To be fair, I don't think anyone would use mashed potatoes in anything without adding butter- that being said some of the ingredients (bell peppers) are disgusting.
In keto, calories don't matter. You don't count calories. You want to keep carbs as low as possible. This is a great recipe. But you don't have to make it if you don't want to.
But, I think I will try it.
Not to be “to” picky, but you should teach your daughter to pull her hair back, with a ribbon, when she is working around food. It’s a GOOD habit to get into. But touché for starting her early. :-)

Steaming cauliflower will keep it from getting water logged
Never tried this with cauliflower, but I think I would mix the cauliflower with some mashed potato. Save at least a few carbs 😏
Mashed cauliflower you can't even tell it's not potatoes, trust me! 😊

Could have just added potatoes with the skins and very little to no butter. Potatoes are healthy carbs. It's also a good idea to teach your kids how to be clean and sanitary when cooking, like not eating some of the ingredients with your hand, and then throwing those ingredients from your hand which just touched your mouth, into the pot. You ssid you just got over laryngitis... it's cold and flu season, best not to spread the germs.
This is a keto recipe, potatoes are not keto.
Otherwise you're right.
This Family doesn't care about sharing germs. Rosie is very clean, washes her hands often, cleans her work areas.
This is just for their family. They are together all the time. I’m pretty sure they are all exposed to the same germs.
