Yo! Pretty good recipe. I used to work for a company that made something similar and I have to give props. I used to make hundreds of these a day, especially during the holiday season. Speaking of season, iirc we added some seasonings along with some sour cream? But we also did this at a huge scale and had some insane machinery to wang jangle like 30+ potato insides at a time (Along with way too much butter, bacon bits, cheese, and sour cream.) Wish I could remember the exact ratios. But I just remember a metric shit ton of butter went into these. And more mayo than should be humanly consumable went into most other products.
Like the 6 year setting on the slow cooker and forgetting about it, I just remembered I let my toddler roam feral for that same amount of time. Its all to weed out the weak, I say.
I have definitely made the mistake of dicing chilies, And then having to take a pee break, forgetting exactly where my hands had just been. I then had to take a "full shower" break to fix it. 😂
