    Would love to get the recipe for the sea urchin pasta.

      There are a number of recipes on-line. I sautéed diced green onion, red bell pepper and copious amounts of garlic, along with salt and a little crushed red pepper. I added about half of my massive amount of sea urchin to that mixture along with about a cup of pasta water for creaminess. I then added the al dente pasta to the mixture and tossed it all together. I then added the remaining sea urchin and half a handful of chopped, fresh cilantro and tossed it gently, then serving. It was both delicious and decadent!

    As a Korean subscriber, since I've watched your videos from the beginning of this channel, Korean subtitles have been translated so well. Even there are the additional explanations for Korean subscribers in them.
    I understand English, but it's hard to understand 'wine terms' in English, so I don't usually watch the TH-cam videos about wine which is not in Korean.
    Thank you for the great videos about wine and good translations.

    I absolutely love sea urchin pasta and I absolutely love it with Albarino like Nana by Attis or in Portugal a rich sparkling cuvee of pinot noir and sercial from Bairrada can also work well. Some Assyrtiko wines can also have exactly the right balance of minerality and freshness to pair with this quite salty dish.

    얼마전 이탈리아에서 열린 F1 이몰라 그랑프리 포디움 샴페인 세레머니에 쓰였던 스파클링 와인이 저 페라리 샴페인이었죠. ㅎㅎ 많은 사람들이 그때 페라리가 샴페인도 만드나? 하고 놀랐습니다.

    "Only sparkling wine from Champagne is called Champagne" Good to emphasise.
    Interesting an older Carricante 2015. Older white wines often combine well with ripened and baked flavors. Agree with John Cavenaghi, the bottle says grape Pinot Grigio and you talk about grape Pinot Bianco. But, above all, compliments.

      Thanks for the comment. My bad! I had both the pinot bianco and grigio in both my cellar and refrigerator and grabbed the wrong one. As you probably know, the grapes are nearly identical genetically and the finished products are very similar. Although Alto Adige is my favorite source for pinot grigio, I had wanted to give some love to it’s less popular twin.

      Can happen! Yes i am familiar with the pinot family. And they are generally very good from Alto Adige. Perhaps you are interested in new pinot discoveries. Look for the pinot gris/blanc from the Kaiserstuhl, Baden, Germany. With soils of volcanic origin. Nevertheles, you wil know the area.

    Tanti auguri di buon compleanno Patrick, and great video! Ferrari definitely deserves more recognition outside of Italy. Just one thing: you talk about Pinot Bianco but the bottle says Pinot Grigio ;)

      I had both the bianco and grigio, from the same producer in my cellar and refrigerator. I grabbed the wrong, though very similar, wine! My bad. I had wanted to give some love to the less well known pinot variant.

I just tasted last week a Pinot Grigio Riserva by Giorgio Grai from 2001 (!!), bottled in 2015, and it was unbelievably young, and extremely elegant. If you have a chance, the next time you visit Alto Adige look for one. Thanks again for your hard work, we really appreciate it!

    Another great value: Sparklers from Franciacorta. Compared to Champagne it is half the price ceteris paribus.

    I'm actually drinking champagne right now watching this! But I'm new and have no idea how to judge wines. Any thoughts about Gardet and 2005 Gardet Prestige? I have a couple of both bottles.

    You should definitely visit Alto Adige, it's one of our favorite regions in Italy. We live in south Germany and it's only 3-4 hours to Alto Adige. They have so many great white wines over there....

      Many people use the terms interchangeably, which is not correct. Champagne comes only from the Champagne region of France.

    No Trentodoc (no Trentadoc) it's from province of Trentino no Alto Adige it's other province. The Ferrari is #1 of Spumante metodo Classico of Trento. World excellence of sparkling wine, it is the best wine in the world, better than champagne, but it is from Trentino. Trentino is a province also famous for the Dolomites (of Brenta). Also for apples, Felicetti pasta.
