Also, I think the roussanne in barrel tastes of more acid is because it does. The evaporation and topping of barrels concentrates those conpounds that can't evaporate through the barrel.

100 % Rousanne is wrong. I drank a few 100% Rousanne from the Northern Rhone and came to the conclusion that it only should take a back seat in a blend . And that is where it is mostly used. It has a lot of body to the point being almost viscous lacking freshness and not having much aroma besides a hint of apricot.

There’s a drain in the floor that runs the length of wineries. It’s sanitary and the way that wine professionals taste in a tank room.
