I learned so much from you over the years about butchering and cooking. Every time I am cutting lamb carcass I feel the need to view this video again. Hi Scott. I love this and it is very informative. I have one question. If you would to break down the lamb into percentages say Best end chops 15%, Loin 15%, mince 5% etc. what would it be like?
