I learned so much from you over the years about butchering and cooking. Every time I am cutting lamb carcass I feel the need to view this video again. Your knife skills, anatomy knowledge and intuition are hypnotising. There's something primal in what you do that we NEED MORE OF! Please do more butchery. Doesn't matter; rack of squirrel or butcher a whole ox, we don't care. Just feed us more butchering videos! Tenderloin of shrew, anyone? :-)

I'm thinking a liberal dusting of S+P and some Moroccan spices rubbed into those choice cutlets and pan fried w butter and olive oil and served with a humble spud and peas, a sprig or two of mint and you're in culinary heaven. Beautiful videolog mate. Cheers :-)

When I was taught butchery 60 years ago we alesys cut the shoulders out on the carcase no short fores in those days some butchers cut square some round shoulders. If you were good you could chop shoulders on frozen hard with 4 cuts of the cleaver

My favourite cuts are shanks and shoulder chops. I prefer it over a rack.
