Made this today in my silicone Bundt pan so I had to bake it a little longer. I used some extra shredded carrots with some water in my magic bullet for the carrot juice. I made extra date paste and used about 1/3 cup in the frosting instead of the whole dates. I didn’t have nutmeg so subbed some clove and allspice. I will make this again after I lose the weight I will gain eating this!! Lol😋😋😋
First time making this carrot cake. WOW, WOW, WOW! Definitely will be making this cake again for a special occasion. It’s hard to believe this is a healthy cake. I made two layers using oat flour and whole wheat flour. For the frosting I used both Hannah sweet potatoes and Japanese sweet potatoes. Ground walnuts were added on top and between the layers. Fantastic! My husband is still talking about it. 😋😋😋😋😋
I just made this with regular sweet potatoes, baby food carrots instead of carrot juice and agave syrup instead of date paste & dates. It was delicious. Husband asked for a 2nd piece. :-)

I want to add fresh pineapple to the cake batter, chopped and drained well. Do you think I should lessen the liquids a bit? But I’m at a high elevation, so it gets confusing what adjustments to make so it bakes correctly. So often it’s an experiment, but I have high hopes for this. Just want to add pineapple to the batter at 5000’. Thanks!

Guessing you probably don't have extra carrots, but if you did have a few more carrots.. you could either shred them and then put in a nut milk bag or a few layers of cheesecloth and squeeze them, or blend them putting a food processor with the least amount of water you can, then squeeze out the juice. Brittany's recipes are so reliable it's clearly worth trying the carrot juice idea, am looking forward to this cake!
Do you consider sweetening desserts with honey (I know it’s not vegan) or maple syrup off limits? They are my go too sugars as well as pure date syrup.
@@TheJaroudiFamily That's what I did and the frosting was really excellent, certainly plenty for the one cake - I would probably halve it next time - and so sweet I'm not even sure it needed the dates. The cake was really good too, I have to figure out which flours are best for the gf version unfortunately I couldn't make the oat flour unexpectedly and used 2 cups of Red Mill GF cake flour. The cake was a bit gummy as a result, but overall definitely a winner. Very tasty and pretty. Thank you for sharing.
I usually buy gluten free, dairy free cake at a local coffee shop for the holidays....and it is a very large slice that is quite expensive. Since I already have the ingredients on hand, I think that I will try it tomorrow. I will gat a whole cake for the price of a slice. I will have to share it though...too much for two people!! 🙂
Buckwheat? is that the only other option or can we do rice flour with potato starch or something? I'm GF but I happen to really dislike the taste of buckwheat. i have tried my "darndest" to like this flavor of buckwheat but it is just nasty to me. I am a member and viewer of your channel and enjoy the content and so when you pedaled the Almond Cow I purchased it via your channel. I didn’t (and should have ...my bad) viewed some of the head to head comparisons of this product on other vegan channels that showed it as an inferior product. My Almond Cow does not work effectively. It does not ground the nuts effectively and as a result does not make quality milks at least in my use. I often need to tediously reboot the machine ... but then the pulp fibers get into the milk. Not fun... not tasty. My question was what has been your experience with this product? I feel as if I wasted 200 dollars. I would appreciate a response as it is due to this channel that I purchased the Almond Cow. Thank you as always for your other great content, I am a fan ... just not a fan of the Almond Cow.

I plan to add walnuts and raisins to the cake and lemon peel and lemon juice to the frosting (I like a tart cream cheese frosting).

Ok, I did make it. The cake was super moist and the frosting wicked creamy BUT, it just wasn’t sweet enough for me. It lacked some oomph. 🤷♀️
I find the longer you are away from refined sugar the sweeter it will taste. You can add in chopped raisins or chopped dates to the batter
