I've got the dynasty cleaver and I can't recommend it enough. That San mai blade is wicked sharp. I've yet to hit bone hard with the edge so I'm not sure how resilient to chipping it is or isn't. Once the budget allows, a dynasty chef and petty knife will be added to make a set. Mabey even the slicer.

If you could only start with one knife out of the collection which size would you get?
I would use the santoku knife. It’s extremely versatile and sharp. I love it.
I don’t own any of these knives personally, but some of them seem to be decorative pieces more than actual daily use knives. All of the Instagram ads I see for them focus on the handles and Damascus patterning more than the steel quality or edge properties
Functionality and appearance can go hand in hand. These knives are very good and the edges are very good. I hone every time and it has held a great edge.
I agree with you to some degree, but I really do enjoy these knives.

@canadianbluepants9446 it’s funny you say that. No joke, my next video was an update on these knives. lol. Well, it’s two weeks out but that’s because I’m always a week ahead in filming. HOWEVER, I can tell you I still use these knives daily.

Looks blunt
One of them came in a little less than sharp. No issues since. I sharpened it really easily and quickly.
These knives are not sharp and they rust easily.
That’s absolute nonsense. These come very sharp. It only rusts if you don’t take care of it per the instructions. I’ve had them for a while and have had to sharpen them, but that’s normal for any knife. Everyone has different experiences. One of mine didn’t come out of the box sharp, but a little work (maybe 3 mins) and it was razor sharp.
@@GrillMarkCo It’s not nonsense. I have many other knives that are not only lighter but they are sharper and they do not rust with the slightest bit of moisture. I have a full set of these knives. They look good but that’s about it.
@StoicMiles fair enough. Some like a heavier blade and others prefer lighter. Do you oil it like you’re supposed to? Hand wash and dry? Never once had mine rust. Sorry you’ve had a poor experience with them.
@@GrillMarkCo I do hand wash it and dry it right away but if you leave the slightest moisture on it, it rusts. I don’t oil it. The blade is thick even compared to my German knives. Cutting tomatoes is no bueno
@StoicMiles they are heavy. Not as fast as a Japanese or German knife. These are quality, I think. All that to be said, I’m sorry you’ve had a bad experience with them. I would reach out to cooking guild and see what they say.
