After listening to both for long time (as this is my favorite track in three houses and one of my favs in three hopes) i can say i love them both equally. To me feels like three houses has the feeling of coming face to face with one powerful foe with of course an indomitable will while in three hopes it feels like that you're seeing that will unleashed on the battlefield i love it!!
Canonnically speaking. Edelgard vs Dimitri is an immovable object against an unstoppable force. And then there's Claude who camps high above the clouds on his albino wyvern, shooting arrows down where none can reach him.

And even if you were right, one wrong doesn't justify other. And about the fact that many people choose Dimitri as the image, I'd say that it would be because the most memorable scenario this song plays in (and the culprit that it is thought by some to be his theme) is arguably while fighting him in Tailtean Plains, wich is a CF moment, so yeah, take that as you want.
