So many recipes! You're spoiling us!
Also, I told my parents today I'm officially vegan now :) I've moved out for uni about a month ago and been eating purely vegan there, but when I went back on the weekends, my parents couldn't even keep in mind the fact that I'm vegetarian ('Oh I totally forgot! Well, just potatoes and a few bits of broccoli are good as well right?). That reached a critical point for me last weekend, so now I've finally found the courage to tell them I want to go fully vegan. Even on the weekends ;) I'm even going to be cooking for them on Sundays and your recipes will be a great help so thank you so much for inspiring me!

@@fruiteend they'll come around when they see you're serious about it! My parents thought I was coming up with a new dad 6 years ago when I announced I was going to be a practicing Catholic. A few years later, they were the ones defending me against the comments people were making about my choices.

@@fruiteend Good for you! They will come around, food and eating in general is such a wierd mix of personal and social habits. Eating together is such a fundamental bonding experience that it is hard for somebody esp your family if you effectively go against their values.
I hope this is somewhat coherrent. I think a lot about the value of food and all the habits associated with it so I'm sometimes too much in my head when I talk about it.
The best of luck to you and you are so strong and brave for staying true to you! That is so valuable.

Sometime I take a small to med. pumpkin, clean it out. Fill with chopped apples, butter, cinnamon, brown sugar and nuts. Put the top back on and bake till pumpkin is fork tender. Rake the pumpkin and mix with apples. Use as a serving dish with the top on or sometime I use as a center peace for thanksgiving.

Love these ideas! Tried the shepherd's pie today; I had no bay leaves in the house. I've added cumin powder and "four spices" powder early on to the (red) onions and garlic instead. Totally forgot about the miso and tomato paste. Added some red beans in the filling. And guess what, it was glorious!!! Thank you for the inspiration.
Oh and for those struggling so peel that pumpkin beforehand: I just chucked it in halves in the oven like you would with a butternut squash and just very gently cut it it afterwards, it's as smooth as butter.

Just a note for the folks using the large jack o lantern pumpkins, you really will need to push the purée through a sieve to get the stringy bits out or it will ruin you end product. If using the small pumpkins, also called culinary pumpkins or sweet pumpkins, they do not have the stringy bits, so need no straining f the purée.
I am American and Hubby is British. I make pumpkin pies every year but was sick one year and so he decided he would make the pies. But, being a lazy cook always looking for shortcuts, he decided just putting the pumpkin flesh from a large pumpkin would be fine…as if I would add extra work just for giggles, right! 🙄 So he cooked the pies up and even made some mini pumpkin pies to enjoy with a cuppa. The flavour was good, but omg they were the nastiest thing ever because it was full of stringy bits…it was almost like not washing your leeks and getting grit in every bite 🤢 So if you are using the big pumpkins that the U.K. shops sell every year, remember to pass the purée through a sieve unless you have a super duper high powered blender! I promise that step is vital As a side note, when pumpkins are out of season, if you crave a pumpkin pie, butternut squash will work in place of pumpkin and does not need to be sieved. Other winter squashes will work too but depending on the type you may still need to push through a sieve. And if it looks like the purée is quite runny, which you do not want, either strain through a tea cloth or line your sieve with a coffee filter and place over a bowl ver night for the excess liquid to drain out.

Hello there, so I've started looking into Veganism and have recently given Vegetarianism a shot but I've found it very hard. Im looking at research but it all seems biased one way or another and the aggressiveness of some vegans is quite off putting. Also, since I'm a biomed student working with animals and animal blood in medical scientific research I wont be a proper vegan anyway since Im using animals and their products. So does that exclude me already? Being a student Im also worried about starting off, how do I find what vegan foods I like without spending loads of money that I really don't have? I hope you realise I am being sincere Im just a little lost about where to begin. Final thing, does almond milk taste like marzipan (I hate marzipan) and if so what diary substitutes do you recommend for milk, cheese, yoghurt etc? My research on the dairy industry has made me a little queasy about it to be honest. Sorry for the essay.
