- Hey Friend, Its officially Autumn(well, in one day) and that means all the fall recipes are coming to my homestead kitchen. I have 6 Cozy Fall Inspired Recipes to share with you that include warm, hearty soups, like Creamy Steak and Potato and a Pumpkin Gnocchi Cheesy Beer soup. I whipped up some pumpkin recipes too, like Pumpkin Spice Balls for snacking, a Yummy Pumpkin Breakfast Bar and A Pumpkin Pie smoothie. I complimented the soups with a Cheddar Apple Biscuit perfect for dipping in creamy soup. I hope you enjoy!

Todays Recipes:
Hearty Steak and Potato Soup
1 pound beef (Chuck Roast, Top Round, Bottom Round, Eye) Cut into small pieces
salt
pepper
1 shallot, diced
2 cloves garlic, minced
4 cups beef bone broth
2 pounds potatoes, cubed
1/2 cup butter
1/2 cup all-purpose flour
2 cups milk
1 cup heavy cream
Sharp white cheddar cheese for topping
Chives for topping
Pumpkin Spice Smoothie:
1 cup Raw Milk
1/2 banana
1/2 cup pumpkin puree
2 tablespoons chopped pecans
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon
pinch of nutmeg
pinch of ginger
2 pitted dates
Pumpkin Ball Bites:

Pumpkin Gnocchi Cheesy Beer Soup:
1 Lb of pumpkin gnocchi
1 Lb of ground pork
1/4 Cup butter
2 Large carrots, diced
3 Celery stalks, diced
2 Leeks, thinly sliced
1/2 onion, diced
2 Garlic cloves, minced
1 Teaspoon of fresh thyme, minced
1 Teaspoon of fresh rosemary, minced
1 Teaspoon of fresh sage, minced
Salt and Pepper to taste
1/3 Cup of all purpose flour
2 Cups of Veggie broth
1 12oz. fall beer or substitute with more broth or milk
1 Cup of Raw milk
1 Cup of heavy cream
16 oz of sharp cheddar cheese, freshly grated
Cheddar Apple Biscuits:
2 Cups All-Purpose Flour
1 Tablespoon + 1 Teaspoon Baking Powder
2 Tablespoons Granulated Sugar
3/4 Teaspoon Redmond Real Salt
1/2 Teaspoon Black Pepper
6 Tablespoons Butter, Very Cold!
1 Tbsp fresh Rosemary, minced
1 large apple, peeled and diced
1/2 cup white cheddar cheese, freshly grated
1 Cup Heavy Cream + extra for brushing the tops
Bake at 350 for 18 - 20 minutes

My husband would love if I added beef to the potato soup. That looked delicious. When it comes to bananas in smoothies, if the bananas are frozen, they don't seem to have as strong a banana flavor as the fresh. They just help the smoothie be thicker. You made some amazing looking soups. I love this time of the year. I went to my friend's orchard today and got a bushel of apples. Have some applesauce in the canner right now.

I don't peal pot. or carrots that are from my own garden. They clean well by just using a veg. brush. A lot of the nutrients are in the peals. All the recipes look good. I will try to get to some of them.
I usually don't either unless they were green or had some bug damage or questionable areas. You're right, lots of good nutrients there! Thanks for watching

I also love the fall season and it's my favorite time of the year! Your recipes look absolutely so yummy. I'm definitely going to try some of them. You had a really wonderful harvest this year. I was so impressed with all that you preserved over the past several weeks....lots of work! We also have apple butter here in Ohio. It's sold in our grocery stores, but I love to buy it at our Amish stores/restaurants in Berlin, Walnut Creek, and Sugarcreek which are towns southeast of where I live. It's takes me about 1-1/2 hours to drive there and the drive through the rolling hills is so pretty. It's a fun place to visit and shop and eat. I love all things homemade. Great video, Kelsey. I made the apple cheddar biscuits to go with pot roast, potatoes and carrots. It paired beautifully.
Mine also did not rise and I made sure to use cold butter. I assume it's because of the moisture from the apples. Next time I will shreds the apple with the cheese and drain it on a paper towel to try to remove some of the moisture.
That said, the flavor is so nice!

All looks so delicious ! I wish I could still eat things like this but alas getting older we have some dietary restrictions. I will however remanage some of these into what I CAN have. It is nice that you share the imperfections as well as all the perfect dishes. I am sure those biscuits were just amazing. I thought Grant was going to drink that whole glass of smoothie in one breath HAHA! I miss being able to get raw milk, but soon will be back in PA and be able to once again get it! Hi, Kelsey. You don't need me to tell you that everything looks yummy! Have you ever used Chinese five-spice powder? (It can have more or less ingredients, but that's the name.) It has a variety of uses, in baked goods, meats and beverages. It's a combination of cinnamon, cloves, anise, star anise, fennel seed, ginger or Sichuan peppercorns. When you open a jar of the mixture it makes you think of chai tea. There are dozens of recipes online for its use but my favorite is in snickerdoodle cookies. I substitute the cinnamon with a ratio of 1/4th to one. So if the recipe calls for 1 teaspoon cinnamon, I sub it with 1/4 teaspoon five-spice powder. The peppercorns and ginger give it some lingering heat in your mouth, so I don't know if the little ones would care for it. The fennel gives a hint of licorice (think of pizzelle cookies, or pork sausage or pizza). It would go great in simple muffins or coffee cake, in a rub for meats, as a base for creamy chai. Can you tell I really like it? LOL Anyway. Thank you for another lovely vlog. ☺

what kind of celery did you grow ? every time i grow it is a little to strong tasting and grows to big
I believe it’s Utah Tall. If you blanch your celery by hilling around it or providing some afternoon shade the flavor will be more mild. If it’s getting really green it’s from the sun and that can make it bitter or overpowering.

It the same I just omitted the seeds and nuts, swapped maple syrup and apple butter and used a pie plate ☺️
