Even though I don't consider it a real spoiler but more a curiousity, I put a spoiler alert anyway, so you can decide if read it or not: Even though the Shinigami have been around for much longer, the Gotei 13 was founded "only" 1000 years before the time of the story, by Yamamoto himself. So there wasn't a previous Head Captain since he is the first and only one xD.
Thing is I'm pretty sure Aizen knew he wouldn't win against Yamamoto so easily which was why he made wonderweiss anyway. Thing is it's also why he also acted while Unohana and the other captains were in hueco mundo. He also considered them threats.
What Aizen feared about Yamamoto is that he could use zanpakuto to blast all fake Karakura, including himself. Well, he tried that because they had 0 % chance of win

Aizen stabbing Yamamoto didn’t happen he can control what they feel so Aizen can slash you and you feel nothing or not and make feel as if you were slash. Aizen also can control spiritual pressure. So Yamamoto plan with Aizen kyokasuigetsu in his gut wasn’t him
