You have another video that do the other half of my requirement: "Send Email Attachments With Salesforce Flow"
Is it possible to combine both actions? Send an attachement with a template that we can modify

How do you recommend to trigger this screen flow? Is it possible to trigger it from the standard Send Email button on Activity?

I haven't found a way to replace the standard email button with a Flow. You can add a button in the Action area at the top of the page or you can embed the screen flow on the page. I do this on a tab and name the tab Email to get it close to the standard functionality.

Can we log sent emails in the email section of case object in place of log it in activity history section?

That's a good question. I think the email will show up there automatically on cases. I could be wrong about that though. I recommend giving it a test and seeing how it works.
