Ingredients:
Biryani Masala:
1 tbsp cumin
¼ piece of nutmeg
1 piece of mace
15-16 black peppercorns
1 star anise
8 green cardamom
6-7 cloves
2 black cardamom
7-8 pieces of cinnamon sticks
RIce Boiling:
1kg Basmati rice
2 bay leaves
1 tsp cumin
3 tsp salt
1/2 lemon juice
Marination and Cooking:
2 bay leaves
Oil
2 onion
1kg mutton
salt
1 lemon
1/2 tsp turmeric
1 1/2 tsp red chilli powder
1 1/2 bunch mint
1 1/2 bunch coriander
4 green cardamom
5 cloves
3-4 pieces of cinnamon
15 garlic buds
1½ inch piece of ginger
6 green chillies
1 cup curd
1 tsp kewra water
Water
1½ inch piece of ginger
2 tbsp water
1 tsp kewra water
¼ tsp food colour
2- 3 tbsp clarified butter
