Hey Everyone!
I’ve gotten a lot of questions about how I prep my salads on the weekend to set myself up for making healthy choices during the week, with salads that stay fresh for 7 days. I use Ball mason jars in the quart size to make these salads with loads of fresh fruit, cruciferous vegetables rich in cancer-fighting sulferophane like broccoli and red cabbage, and anti-cancer powerhouse mushrooms. In this video I explain the order which I stack these veggies in the jar, which consistently keeps them fresh for me for up to a week, and the way that I serve and dress them at work.
I follow a bright line eating (no sugar, no flour, measured meals, mealtimes) philosophy and a whole food plant based diet to stay healthy and trim. I designed this meal plan with the vegan, WFPB and nutritarian principles explained in the books “Eat to Live,” by Dr. Joel Fuhrman (the salad is the main course!”) and“How Not to Die” by Dr. Michael Greger. This salad hits /12 items on Dr. Greger’s daily dozen in one meal!
Each salad includes:
6oz fruit (pineapple, blackberry, blueberry, peach, strawberry, grape, kiwi)
12 oz mixture of baby spinach, broccoli, red cabbage, onion, mushroom
Dressing: Applied right before eating = 1 tablespoon oil (I love olive, walnut, flax seed, or sesame), 2 tablespoons tamari sauce (gluten free soy sauce) or choice of vinegar

As I approach my goal weight I’ve needed to tweak the above a little to keep up my weight loss. The last few weeks, I’ve been eating 3 of these huge salads a day and an absolutely enormous (I.e. 15-20 oz) serving of homemade sauerkraut. I’ve found that as there weather gets nicer and produce is getting more varied and abundant at the grocery I’ve been really craving lighter foods and fresh salad. When I hit my goal weight, I’ll be transitioning back to more frequent beans and starches like rice, sweet potatoes, yams, etc.

OMG! Yes I love mason jars and have used them for many years to store foods, canning, eating, drinking from. They are sooo versatile, and last forever! I just periodically, if not canning for shelf storage, buy new lids and rings, and they wear out. Also, I wanted to let you know I get many of my jars at thrift stores for very cheap. You just have to search (I prefer the wide-mouth too, easier to wash, etc.!), and make sure there are no nicks in the glass around the mouth of the jar. Thank you for this great vid. I got a silly question but do you guys eat the salad straight out the jar how do you mix the ingridients in the jar? Or do you serve it in a dish and then mix?

I have been looking at jars that can be used. Both kilner and Mason ball jars do preserving jars. they have a a 2-part lid. Are these the type you use to make the salads in? if not then what type do you use

Wow, salads for every meal. Good for you. I am stuck on my steel cut oatmeal in the mornings because I love that. I am on auto pilot with that whole process now, as I’m sure you are with salad prep! You should sprinkle some ground flax seed on top of salads for the lignans/ omega 3s. :-) I do about 1-2 tbsp a day.

Do you prewash your fruits and veggies before putting them in the jars?
Those jars look fantastic. Such brilliant colors. Not a criticism but I’m surprised you’re using oil - so many of the WFPB guys say it causes heart disease.

Hi I will definatly make at least 7 salads to start out. I have so many mason jars; however mine have a slightly narrower lid. I think they will still work, I'll just have to pull the salad out. What do you think about using arugula with the spinich and or romain? So this would count as 1- 6oz fruit serving and 1- 8oz salad/6oz of veggies?

I'm watching for a 2nd time. I hope to be able to capture your 7 day prepared meals. They look wonderful. I've lost 15+ # so far but reaching a plateau using My Fitness Pal on a 1200 cal. diet. Is sauerkraut a protein? I guess if I’m not fully vegan, so to get my proteins I would just add 4 oz of protein to or with the salads, correct? I’m a newbie so still learning. Did you ever eat 3 meals a day with a breakfast with oats and grains?
Where did you get your square white salad bowl. I like big salad bowls which make it easier to eat and not make a mess like salads can be.

I so rarely eat salad and never eat raw broccoli, and the idea of mixing it with the fruit really Icked me out at first. By the end of the video you had me convinced! I think I’m gonna give this a go and see if I can convince my little girl to try some too! Thank you for the video!
Hello.One question.Do you think or know that BLE works(better) in vegan than ordinary eating?While I ate vegan or vegetarian food,I was loosing weight,then I moved to all food and only maintain my weight,no chance to lose a gram.Thank you.

Awesome method! Would you suggest a substitution for the mushrooms though like any nuts or seeds? (Not keen on mushrooms).

Try using cooked lentils, or other beans over your salad and raw sunflower seeds! Yummy!

no meat or dairy for me, but I like the idea of addressing the addiction . it DEFINITELY is for me. after a month of no dairy, no sugar and no white flour or refined/processed foods, I feel so much more in control. i'm losing weight like crazy and so relieved. feeling like I can actually do this! weight watchers failed so many times. because, as I now realize, I was "budgeting" cackers and bread and sweets, etc.

Do you eat the same salad three times a day? I noticed on the last video I watched you had cooked lentils dal that you made. Are you now just strictly fruits and veggies?

Once you cut into fruit and veg you start to loose nutrients so if you want maximum of vitamins it’s best to prep food for only two to three days , seven days food can ferment

You look very good to be losing so much weight. I like your salad idea but I think sometimes you should add a few walnuts or some type of nuts in it even Brazilian nuts that has selenium in them. But not Everyone likes nuts LOL
I add a handful of sunflower seeds, raw, unsalted. I have made dressing with a ripe banana and half an avocado, and all the garlic powder oinion powder and basil that you like/ fresh to if you have it oh and the best is cilantro! Delish!
Are these the only meals you eat? Also I thought raw mushrooms are toxic.

I can't stand the smell when I open the jar after a couple days....Help...is there anything that can be done about that??? is it because of certain veggies I am adding, like broccoli?? Thanks
@@thatdiycouple5513 Hi thank you for the reply. I put oil and vinegar on the bottom of the jar and add the veggies. This time I put radish in contact with the dressing. But I def do not pack it down as much as you do....maybe that is the reason, maybe its because of using dressing.... I will try cabbage. I have not seen a video yet where you talk about what you drink??? do you drink like a gallon of water a day? curious of your opinion on raw garlic and apple cider vinegar with the mother? I took beano one time and became severly ill !!! Returned it the store and will NEVER take it again LOL ( I am a newbie to your channel and have enjoyed watching your videos. I was doing this for a few weeks but my hands are too big to fit in the mason jar to clean it properly hahaha Ive still been having a salad everyday but I just mix the ingredients on the day of... I should find some way to clean them because I miss just doing it once per week instead of daily!
Ive never seen any!! It was hard enough finding big ones haha. Will keep an eye out for them though
Get a bottle brush! They can be found by baby stuff.
Wow, love this! Unfortunately, if I ate that much spinach I'd have some next level kidney stones (I love spinach but not allowed to eat it :sadface:). I also don't really love the taste of kale - can you suggest any other alternative than kale for the spinach portion of your salad jar?
What about baby arugula? That stuff takes longer to go bad. It's kind of peppery tasting though.
I don't think I could eat salads every single day. I would get sick of it.

Mushrooms are only beneficial for your health if they are cooked. Not sure you knew that or not. I learned that recently from the owner of Four-Sigmatic mushroom tea/coffee/mushroom blends.
You can also eat them raw and get nurishment (great for building the immune system), but they get more nurishing if heated. They are good for you though both ways.
What is your protein source?

You can eat them both ways, just make sure you wash all the dirt off of them.
