  • One Pot Shrimp Orzo with Lemon, Rosemary and Feta
    Ingredients:
    - for shrimp
    shrimp (peeled, deveined, tail-off) - 1 lb
    salt - 1 tsp
    baking soda - 1/4 tsp
    olive oil - 2 tbsp
    - for orzo
    cherry tomatoes - 200 g
    kalamata olives - 100 g
    roasted red peppers - 70 g
    garlic - 15 g
    rosemary - 20 g
    lemon zest and juice - 1 lemon
    olive oil - 3 tbsp
    orzo - 1 1/2 cups
    chicken broth - 3 cups
    feta (crumbled) - 170 g
    Steps:
    1. Take shrimp (peeled, deveined, tail-off), salt, baking soda, and olive oil. Mix it. Let it marinade for 10 - 15 minutes.
    2. Chop cherry tomatoes, roasted red peppers, kalamata olives, garlic, and rosemary.
    3. Zest one lemon.
    4. Take a frying pan (medium heat), spread shrimp evenly and cook for one minute per side. Remove cooked shrimp.
    5. Add 3 tbsp of olive oil to the frying pan.
    6. Cook chopped garlic for 1-2 minutes (medium heat).
    7. Add cherry tomatoes and cook for 1-2 minutes (medium heat).
    8. Add orzo. Toast it for 2-3 minutes (medium heat).
    9. Pour 3 cups of hot chicken broth. Add rosemary.
    10. Bring to a boil and reduce heat to low.
    11. Simmer for 8 minutes, stirring occasionally.
    12. Add chopped roasted red peppers and kalamata olives. Simmer for 2 minutes.
    13. Add lemon juice of one lemon.
    14. Add precooked shrimp, crumbled feta and lemon zest.
