      The outer layer of the food is partially shielding the microwave energy. You are supposed to let your food item sit for a minute after microwaving to let the temperatures even out, that way you don't burn your mouth, but it's still cold in the middle.

    Another great thing about microwaving broccoli, is you can use a bowl and an ounce or two of water and a covering (like a paper plate or other microwave-safe cover) to steam it. About 3 mins of steaming will still leave plenty of nutrients, though you should also be eating raw vegetables as well for their nutrient content

    I wish they had explained how microwaves work. I encounter so many people that think microwave radiation can cause cancer simply because it's called "radiation"

      actually long term low level exposure may also be dangerous. A burn happens either when excessive heating destroys the tissue or in the case of sun-burns, chemical burns, and possibly microwave burns, the cells destroy themselves when they detect severe enough DNA damage to help prevent cancer. But just as sun exposure below the level that will burn you can still increase your risk of skin cancer, microwave (and other EMF) exposure may also be able to cause DNA damage and oxidative stress that can lead to problems over a long period of time. Cellular toxicity induced by non-ionizing radiation has been demonstrated in numerous studies.

      peachy keen funny thing is, the term "radiation" came long before the term "radioactive". It is derived from the verb "radiate" which means "to diverge or spread as if from a central point", aka the nature of waves emitted by a point source.

    Thank you for that episode. It annoys me so much, that you hear this myth so often between health conscious people. I guess it has something to do with an information bias. People read studies in which it is stated, that vitamins get broken down by microwaving, but they propably don't tell you, that this happens with other cooking methods as well.

      Why are you claiming this is a win? Where is the proof? ANYONE can make a video like this and say ANYTHING. Where is the proof? Where did she show us a test? Cooking something in the oven and then in the microwave, THEN having it tested to see EXACTLY how much nutritional value is left?? What if the test shows the oven retains 75% of its nutritional value and the microwave only holds 50% , and you have people like this claiming there's no difference, Without this information this whole video is a farse and get's gullible people like to believe in something without even showing you any test results or proof of any kind, just simply misleading . Then you go and tell other people " Hey i saw this TH-cam video that says microwave don't kill vitamins" this is how rumor's and false spread. Not to mention it now reflect's on you making you look silly spreading false info, most people wont say anything not wanting to be rude because there your friend but inside they will understand you just gullible and easy believe things people tell you with no fact's.

      CreagDog2 It's not about cooling. It's about "resting" the food to let the temperature equalize and everything get a bit less runny. It's the same reason you're supposed to let a steak sit for a few minutes once it's off the grill before serving.

      MarkThePage Microwaves don't actually run on low power. Magnetrons run full power or not at all. The low power settings on a microwave simply turn the magnetron on and off every few seconds.

    Oddly enough, microwave cooking always begins on the outside and only gradually works its way in. This is easily proved by actually microwaving something.

      You guys are rookies. Never microwave on full power. Place any food you wish on 70% to get to "warm" & then once there, finish it off with a full nuke. I usually will do frozen foods at 90 seconds at 70% then 45 seconds at full power. This solves any problems like that. That is why you have a POWER SETTING. USE IT!!

    There's an aspect of microwave operation you didn't cover, the importance of the turntable. AS I UNDERSTAND IT, if you cooked something in a microwave that wasn't turning you would get bands that cooked and bands that didn't matching the waveform of the microwaves. This, I BELIEVE, is why something at the very center of the turntable (so it stays in the same place) can remain frozen when everything else cooks.
    I try to offset what I place in there so everything moves around.

    Popular question / answer: Why the middle of your frozen burrito stays cold. .. Because your burrito is mean and doesn't wave back whenever your micro waves.
    Technically true, the molecules don't move effectively due to them being frozen. For example, Microwave will not melt an ice cube unless there the cube started melting before putting it in the microwave. (I know this cause That's what the ice cube told me when I tried putting it in the microwave)

    While in culinary school, one of my chef's had a daughter who did an experiment with water for college. She used different types of water (purified, spring, tap, etc) to water plants. One of the types was water that was microwaved, left to cool, then used to feed the plant. At the end of the study, all of them were about the same, except the one that received microwaved water. That one died.

      Yeah, a lot of people have some variation of this claim down in the comments. From the sheer amount of folks repeating this, I think it's just hearsay, a common hoax spread around and around until there's a dozen different versions of it. However, the only verifiable source I've found is actually in the show Mythbusters, episode 212, when they water a plant for one week using tap water, stove top boiled water, and microwaved water. All three plants did just fine.

      Coincidentally, the title of the Mythbusters episode I mentioned is "DO Try This At Home", so yeah, doing it yourself is probably the easiest way because I doubt there will ever be any sort of published study on microwaving water. I imagine it's a foregone conclusion in the minds of serious researchers who understand the basic mechanism behind microwaved water.... which is basically heated water. Most of the microwaving studies is more on nutritional loss in foods compared to other cooking methods, as this video indicates.

    It takes much longer to get the inside of something hot than it does the surface. Even how things are placed on a plate can affect the cooking time.(doughnut shapes work best)

      Just let them know that they're being constantly bathed in at least 800watts of IR radiation 24/7, no matter where they go in the Universe. IR is quite a bit higher frequency and much more dangerous than microwaves.

    I think this misrepresents the way ovens work. They work mostly through radiant energy, not through conduction of heat from air to food. You can tell this directly by putting your hand in the oven. The side of your hand toward the heating elements gets much hotter than the side facing away from the element, even though both sides are immersed in the hot air.
    This also explains why tinfoil works so well to prevent overbrowning of crusts or poultry skin.
    Convection currents, in convection ovens, help to correct this, but still the radiant energy dominates.

    I feel there are at least two inaccuracies in this video:
    First: microwave doesn't heat the items from inside out, but it basically skips air and other non-absorbent material. But a lump of food will still heat outside-in. Hence, I have my doubts that fast-microwaving (basically roasting) removes less vitamins than a slow-heating one (where the same power is put in, but time is given to convection-heat the rest of the lump. Since temperature destroys vitamins, a slow heating should be "healthier". At least empirically.
    Second: no decent cook makes their popcorn in the microwave. A small pot is better and faster, yielding higher pop count and less burnt edibles. Empirically, the un-popped kernel sinks to the bottom and rises when popped, making the process self-fed.
    But the microwave oven is a marvel in itself, so I'm willing to let those inaccuracies slip in, inb4 genetic modification zealots start commenting...

      Same time doesn't mean equally. But they *do* heat the inside and the outside at the same time. Which is in contrast to a regular oven which only heats the outside.

      The answer is absorption: The outer 1-2 cm of the food absorps nearly all the wave energy. So no energy (=no heat) will be transfered by the wave into the food anymore.

      Ovens that rely on a turntable leave areas of hot and cold. I'm not sure why the turntable idea ever caught on unless it costs less to produce, It's also silly, there's a better strategy. The earliest household microwave ovens had no turntable and didn't need one. None of the commercial microwave ovens sold today have a turntable, they all use a hidden rotating antenna (or two) to disperse microwave energy. Better mousetraps.

      Plastic can't cook food. It doesn't generate any heat.
      Also as a side note. Some plastics use lead salts to soften the plastic. That was being leached into the items in the plastics. Most newer plastics that are actually designed to come in contact with food doesn't use that to soften the plastic.

      The reason why they are called micro nutrients is because you don't need perceptible amounts of them. With protein, you need somewhere in the realm of 40-60g whereas with say vitamin C, you need trace amounts as in literally can't be measured with a kitchen scale

      You don't need anywhere near a kilogram of protein per day. You need about 40 to 60 grams for an adult; the amount varies depending of age, weight, sex and other factors.     A note on traditional ovens; it's not just the hot air in the oven, but the infrared energy radiating from the walls of the oven, that heats the food. That's why a good baker knows to give the oven extra time to preheat, past when the thermostat tells you the air is hot.

      My wife is a farmers daughter from India, Kerala, and she says that after boiling some vegtables they will reuse the water, e.g. add some spices to make it more tasty etc. Rice water for instance is very good for you and can be used with salt if you have diarrhoea. But if you have diabetes the glucose levels have to be taken into account. On the other hand foods like Yam or Tapioca they won't reuse the water as it can have contaminants. That said, mamy today steam their food. So thats a Yes.

    Nice video. The microwave oven is a resonant cavity. It's internal dimensions are selected as a multiple of the wavelength of the radiation. This causes the waves from the magnetron to add and intensify. The metal mesh in front of the window is designed to attenuate the waves.

      I imagine solid water (ice) reflects microwaves much more than liquid water. This is why most frozen microwave foods are thin. To fix your problem, give those tasty hot pockets a rest in between 2 cooks. Will allow conduction to melt the ice a lil bit.

    This video in part is inaccurate. Microwaves do not heat all parts, middle and outside, at the same time. Heat to the middle is only transferred from the outside layer as the microwaves cook the outside. Think of microwaving leftovers or a burrito.. hot on the outside, popsicle in the middle. I actually expected more accuracy in sci show.....

      Mine heats up the middle too, you must have a duff one. It is dependant on the waves, so some parts of the microwave will heat up differently, which is why you need to put it on a rotating plate so the food moves through the waves... put a piece of food in a different location in the microwave, you'll find it has a totally different heat profile after a few seconds of cooking. So, if you normally put your food in the middle, move it to the outside instead. The waves are roughly 12cm long, so the peak of the wave in one place means 6cm over, the wave will be at its lowest point. Search videos or pictures of "microwave chocolate speed light" to better understand, as this is a common experiment done by people to measure the speed of light in their microwave. And be careful about calling things inaccurate just because you misunderstand them!

      Sorry, just wrong I'm afraid... explain why microwaving a cup of coffee leaves a cold cup but a warm drink? And that most microwave ready meals are in a plastic package that you only pierce to allow steam to escape? Microwaves, like any em wave, have a penetration factor and most foods are fully penetrated by microwaves. Usually the areas of your food with more water will receive most of the energy, explaining why parts of your burrito are cold.

      An oven cooks with heat and the heat has to work its way from the outside in. Microwaves don't cook with heat. Microwaves don't transfer heat from the outside in like an oven, they excite water molecules. The microwaves go through the whole thing. You misunderstand what she is saying. It is cooking all parts at the same time. That doesn't mean that the middle and the outside will heat at the same rate.

    Microwaves only penetrate about 1 to 2 cm into the outer layer of the food the heat penetrates the rest of the way via conduction. This is why a microwave can boil liquids very quickly but your burrito is still cold. The water is constantly moving and conducting the heat much faster.

    There are a ton of possible myths I think about with the microwave. Is the radiation from the door bad for you? I was always told as a kid not to stand in front of the microwave, but as an adult, I obviously understand the concept of the shield in the glass of the door (Faraday cage science, yay). Does microwaving food cause us to ingest any radiation that can build up in a short period of time? I was told by a friend that microwaving food can cause stomach cancer.

      No. The radiation people fear from ingesting radioactive materials are particles that gives off radiation (in the forms of alpha, gamma and beta radiation) as they radioactively decay. Your microwave is not capable of doing that.

      Expert Excavating Stomach cancer from microwaved food? Wow, I had never heard that one before. 🤣
      My guess is that if you eat so much microwaved stuff that it gives you stomach cancer, you have a completely different set of problems to begin with and to worry about. I think it has less to do with the fact that it’s microwaved. Also, you cannot „ingest radiation“ as such. You can ingest irradiated or radioactive material, but in the case of our microwave oven, all the radiation does is heat up any water it hits. If your microwave oven emits anything other than, well, microwaves, (eg alpha, beta or gamma rays) then again I would not worry about getting stomach cancer from the food - I would instead worry about the fact that you have an unlicensed nuclear accelerator in your kitchen 😉

    I have an EMF meter. I have to stand like 8 feet away from the mikrowave in order to avoid both the magnetic and radio waves. I unplug my microwave when not in use because even when turned off but still plugged into the electric outlet my EMF meter reads high levels of magnetic fields up to 2 feet away from the machine.

      There is evidence that non-ionizing EMF exposure has negative health effects other than "heating", and actually the government recognizes this and has limits in place. That being sad, from the literature I believe most everyday sources of EMF are probably safe and this is mostly an issue for certain workplace environments, or if public exposure was escalated dramatically. I unplug my microwave to save money because its old and wastes a bunch of electricity even when its not being used.

    This video is an example of poor systems engineering. Of course there is still protein in some nuked chicken breast, the chicken is still in there it didn't go anywhere. The question should not be, "is there still a measurable amount nutrition in food after microwaving," it should be, "what is the quality of the nutrition present in food after microwaving." Microwaving, like any other form of concentrated radiation, causes cellular damage to organic materials. We like to pretend that it doesn't matter what the source of nutrients are because they will all be turned into chemical soup during digestion. But, that chemical soup isn't perfectly atomized through some magic perfect bio filter. The cellular damage affects how the body can break it down into usable materials.
    A really poor analogy but its the best I can think of atm is if you measure the nutrient content of an unfertilized chicken egg and a fertilized chicken egg, you will find basically the same nutrient content... except one is "alive" and will grow into a chicken and the other is a pile of nutrients.

    1:02 Are you on glue? I've seen this claim so many times. I don't care what your textbook says, I know what my microwave and burrito say. It's even worse if trying to microwave something like cheese sauce. The outside fully boils and starts baking to the dish before the inside is even luke warm. It reminds me of how scientists used to say bees can't fly (because they didn't understand the dynamics yet) even though they flew right past their nose.

      Scientists didn't say that. Engineers said that, in the pop-culture predecessors of internet memes, because even engineers didn't actually say that. Also, you might need a new microwave. Ours works fine; like any tool, you just need to understand its limitations. I've used it for depth-defrosting and pre-centering pretty well. Haven't tried Burritos, though.

    I stopped using microwaves forever. I just heat up my chicken nuggets on a stainless steel pan.

      ziljin yeah, because the chromium in stainless steel is obviously better than teflon in non-stick coating and even better so than the silicon from the pyrex dish you'd use in a microwave.
      People should stop passing around miss info about microwaves and their dangers. Especially people who don't understand the underlying physics.
      Sure mirco oven use electromagnetic waves, and since gamma rays are electromagnetic too this must mean microwave are radioactive. Not even close. You know what else is electromagnetic, visible light. Rather than ditching microwave because you think they might be dangerous, try keeping your eyes shut as visible light could irradiate them and get you eyecancer.

      Frosty Joshx yeah. If i want crispy nuggets or crispy corn dogs, i use my oven. Otherwise a microwave will just make it a soggy mess.

    I figure the main reason for the "microwaved food isn't nutritious for you" school of thought comes less from any fault of the cooking method itself, but more from the fact that most readymade food designed specifically for use in the microwave, is not very nutritionally sound.

    So... you answered how vitamins are affected by microwaving but not the proteins and carbs. I really wanted to know about the proteins cuz that's the one I have seen most addressed by the "natural" type medical professionals like nutritionists and chiropractors. They have said microwaving affects the proteins as to make them unrecognizable to the body and therefore not absorbed as they should be.

    The problem with this is that for some food items most home microwaves are too weak to fully heat the whole food item as the microwave is too weak so the energy doesn't penetrate all the way so part of the food item has to overcook in some cases before it is such as defrosting leftovers or nuking a potato. Commercial microwaves have a much higher power level and make quick work without overcooking anything. By the way the habit people have of nuking things in Tupperware is obvious from the damage it leaves behind in the plastics.

    I think the bigger concern is not the nutrients destroyed. It's the use of plastics as a place to heat food in microwaves since you can't use metals. Heated plastics can release BPA into the food. That said, some metal pans (for oven use), particularly teflon or other non-stick materials, could have similar problems with non-food molecules entering the food.
