Ingredients
1kg of parboiled rice or jasmine rice
• Tomato paste (you can measure out 3 tsps)
300g of fresh tomatoes
1 red onion
Salt
Spring onions
Bay leaves
Fresh peterselie
Fresh coriander leaves
2 red ball paprikas
1 tsp thyme
Dried red paprika
2 tsp curry powder
Chicken seasoing cubes (2- 3 cubes)
3 garlic cloves
2 habanero pepper
Half finger of ginger
Vegetable oil
1kg of whole chicken thighs
What better way to start the weekend than with some smokey jollof rice.
There are several variations of jollof rice across Africa ( especially West Africa). The most famous being Nigeria, Ghana Jollof. Cameroon and Senegal also have a Unique take on this one pot rice delicacy.
