      When mainland China fell to Mao in 1949, the Chinese chefs who cooked for the emperor and the elites escaped there. They brought the culinary traditions from multiple regions of China. The Chinese cuisine in Taiwan did not get tainted by the cycles of famine and the Cultural Revolution. Chinese chefs also took advantage of Taiwan's strategic location. Tropical climate and rich soil produced high quality fruits, veggies, and tea. Also, easy access to seafood. Chefs also incorporated ideas from neighbors, namely Hong Kong, Japan, Singapore, and Philippines. So, I often tell people that if you really want the best food in Asia, go to Taiwan.

    Yummm i love eating this!! In taiwan i just eat the thin cut strips, but i know pastas do have it shaved on, you need to try !! Really wanna try that whole raw cooked roe 😍

    In Italy we use this dried roe! It's "Bottarga", it could be from muggine (mullet), tonno (tuna), etc...

    That was very interesting but I'm not sure id I'd like the roe. The last time we tried fish roe it was way too salty for our taste BUT, I would absolutely give it a try it with the apple to balance the saltiness.

    Striped mullet are found all over the world. I've caught and eaten them many times in Florida. The meat is excellent and smoked mullet is a delicacy not to be missed. Those little organs are the gizzards, not stomachs. I admire your commitment to your craft.

      @@cherrymetha3185 Some birds, chickens and fowl, have them. They're a muscular organ in the digestive tract that grinds up food the fish or bird has eaten. Earthworms have them. Basically it's like a set of grinders farther down the gut.
