    Nice video, Steve. I know many people have commented on your speaking voice, which is so easy on the ear. I also appreciate your presentation, which is highly professional. Your use of language, too, is great. No Yada, Yada, erms or uh's. The latter are my pet hate. Also your eye contact with the camera makes me feel like you are engaging personally. Many you tubers eyes are shifty and all over the show. Every time a video pops up I watch, even though the content matter may not always be of interest to me. You just are interesting and so likeable.
    Know that you are much appreciated and inspire me to be more keto compliant.

    Lupin beans are a common snack here in Jerusalem. They are sold on street corners and parks in little cups or bags. They are also sold dry and take a few days to prepare but are relatively cheap. But I've never seen a flour made from it. Even boiled they are very tough, but maybe if I boiled them longer I might be able to grind them? Hummus is an absolute staple in the local diet, as is falafel, and I find it very hard to abstain. The bread I can give up, but hummus? No. I have been experimenting with soaking chia in lemon juice and mixing it up with tahineh, cumin and garlic and maybe adding a spoonful of real hummus to it for flavor. Tastes good but it looks odd, lol. Try your hummus with cucumber slices. Yum. Thanks for the ideas!

      Hi Carol, please know that the lupin beans sold as a snack/are sold dry to soak for a few days are called "bitter lupins" since you need to remove the bitter (alkaloids) via soaking. The Aviate and other Lupin flours are "sweet lupin", not because they are sweet to taste, but because they have low levels of alkaloids due to natural plant breeding. :) Good idea to try to boil prepared bitter lupins to then boil and grind and add to hummus. In Canada Loblaw's No Frills brand actually sells Lupin Beans this way :)

      @@colleenmadden8579 thanks for the reply. They sell both the bitter and sweet varieties dry here. I'm not really fond of them because even after they are soaked for days and boiled, they are still hard. But I may experiment with them in the future.

      Update!! I finally had the chance to use the flour and flakes. I made the chocolate chip cookies on the Aviate website and subbed the sweetener for brown Swerve and they came out delicious!! I also altered the method and creamed the butter and sugar first. I also gave the flakes a try and made a version of All Day I Dream About Food's peanut butter granola using the lupin flakes and allulose as a sweetener. It is superb. The only problem is I went on Amazon to buy more flour and it's gone!!! I can't wait to see what you come up with as well!!

    If you miss grits-ground lupin beans are it! Cook just like grits.... The longer you cook the creamier...i add nut milk as well since i do to grits. Add whatever you would to grits. Butter, cheese, bacon, with shrimp, etc.

    I am So excited there is a flake and that this brand is bitter free. I always try and sub out some almond flour in every recipe with lupin just because of calories etc but couldn't do too much because of the taste. It's like my prayers were answered. Glad you found em Steve, bake away for us!

      Don't know how strict you are, but Dr. Cywes actually allows beans, so after some glucose tests, found they ok for me in case you want to check how your system reacts.

    Love this recipe! I have lupin flour and made some biscuits with it from a recipe but I didn't like it. It had a slight bitterness. Your grandbaby is adorable!. I'm a part time babysitting Nana for both my daughters and love it!

    Steve, I'm Greek and living without hummus has been a real challenge. I tried this recipe and only swapped out the eggplant with roasted zucchini which drops the carb intake by 1.3 grams per cup. (Not a lot but it's much faster to roast zucchini vs. eggplant 🙂.) I was floored with the taste. No one would know that this is keto version if they tried it. I even kept the skin on the zucchini and the color is slightly greener but still looks very similar to authentic hummus. THANK YOU so very much for sharing this recipe with us. Game-changer for sure!

    Just placed an order and it will be delivered tomorrow. Cant wait to give it a try. I have tried Lupina and Miracle flour and found that the Miracle brand is very bitter and the Lupina one is just ok. I cannot wait to try this one. I have a recipe for chips that are very crispy like tortilla chips. They are ok with the Lupina brand, but still just a bit bitter. I am hoping with this one they will be spot on and I wont be tempted when I have Mexican food anymore. Love your videos!

      My opinion on lupin/lupini brands:
      - Miracle Flour - not a fan. Very earthy, bitter taste.
      - Lupina - quite a bit less bitter, but still had to "cut" it with another flour
      - Small Town Specialties - almost no bitterness, but very high in net carbs due to the variety of bean
      - Carrington Farms ground lupin - great for "grits" or couscous substitute, a little earthy
      - Aviate Foods - my new "go to" brand. The best combo of flavor / macros.

    I've tried the Carrington Farms brand ground Lupin for grits, hummus, and even a type of tamale masa and it works great. Going to give this recipe a try. Thanks again for another great adventure into the keto-mimics-carb-world. Also, the Lupina brand lupin flour is amazing. No bitter taste.

    My children with their spouses and kids come for dinner at my home on Sundays. Fortunately they’re all on board with a keto menu. I cooked home brined pastrami with roasted cauliflower and your lupini hummus and chocolate mousse. The hummus was a major, major success! They all loved it, my daughter even found it to be better than the usual chickpea one. So thank you!!

    My American-Italian grandmom always had a jar of "pickled" Lupini beans in her refrigerator. We would sit there and pop the beans out of their cases and eat them just like that. Now I'm going to have to run to the store and get some! Lol I've been dying for hummus for a while now. I'm gonna try this. Thanks!

    Ive been looking for Lupin flour recipes for quite a while. There just really is not anything out there AND keto friendly.

    Thanks for the great code, it really made a difference...I bought 3 bags of each. I've been experimenting with the Carrington Farms Ground Lupin...I actually like it right out of the microwave, cooked with the recommended water, salt and a good pat of butter. I've served it as a side like couscous and it's pretty cool to have something so easy. For that, I just nuked the ground lupin as described and separately, browned a bit of chopped onion with some mushrooms, seasoned well, added green onion snips for color, tossed all together and served as a fluffy side with a meal that had sauce. It was a win, to me. It does have a bit of al dente grit in the mouth-feel, I'm going to see if soaking overnight does anything for that.

      Mary I did it the same way but added some softened cheese. My guys loved it (no mushrooms) and thought it was even better the next day, so was asked to make a day ahead. This is a great find

      I've been doing the same. When I'm too lazy to cook I just microwave it, add butter and parmesean and it's perfect. Kind of my new mac n cheese.

    I made my first attempt today at this hummus. And even though I didn't have salt (weird right? Who doesn't have salt?) it turned out pretty awesome. Same consistency as chickpea hummus. I see making all kinds of different hummus variations. I love a little green chile in hummus for a super fresh taste. Thanks for this recipe and turning us on to Lupini flakes. It was fun cooking them and I'm glad I used my larger pot and not a sauce pan because they instantly foam up big time when they hit the boiling water. I stirred them for several minutes and then the foam disappeared. So I knew they were done. It was fast and easy.

      I foresee a lot of recipes coming with these Aviate lupini products (and not just because I'm an affiliate). The flour is the best lupini flour I've tasted and it has the best net carb profile. I've been experimenting a lot with the flakes and could see a number of applications for them including as a rice substitute, a breading, and a component for granola (just to name a few things off the top of my head).
      I'm glad to hear your having fun with them too!

      5-10 drops of liquid stevia to counter the bitterness of the tahini.

    Steve, I got so excited, I wrote on your website under this recipe. I was just so happy. I have been wanting hummus and have watched this video a couple or three times. Anyway, I finally bought some lupin flour. But that was flour. Just didn't feel flush enough to get the flakes, too. But I thought I would try this with the flour, and it worked! I did a small batch, only 1/2 cup lupin flour, and it ended up needing the same amount of hot water (I may need some more to thin it as it more completely absorbs the water). Only after I had done my happy dance and had written you on your web site, did I read on the bag that you need to cook the flour before consumption (just like wheat flour warnings). I don't know that even boiling water would do the job (I used water hot from the kettle into the flour, allowed it to cool some before adding the other ingredients), but figured I should add that as a PSA. But I wanted you to know, in a pinch, even lupin flour will work (it was what I had and it scratched the itch!). So, thank you, Steve.

    Just tried the lupini flakes and they are really good. I used them replacing rice with a fish curry. Will be making your hummus this week.
    I was making baba ganoush and had no tahini and found two great replacements: unsweetened peanut butter and dehydrated peanut butter. Both worked really well, you couldn’t really tell the difference. Way cheaper too, always a good thing.

    This may be kind of nerdy... but the big foam-up that happens just after the flakes come to a boil is called the "protein break." It happens in beer brewing too, as well as when boiling anything that has a fair amount of protein that escapes into the water. It's a strange phenomenon in that it suddenly raises in the pot and can easily boil over. But if you stir the shit out of it right before that starts to happen... it mitigates the situation. Nothing stinks worse than boiled over beer "wort" once it hits your stove eye. I imagine scorched lupini foam doesn't win any aroma awards either. Great video!!!

I vaguely miss the sense of accomplishment of home brewing, but I don't miss beer farts and hangovers in the slightest. I honest to God... NEVER thought I'd be able to say that. But I'm down 35 lbs, and I would say... most of what I eat in a day, I picked up from your YT channel. It's the first keto channel that one can actually trust. I gave up on TH-cam keto after my 20th failed recipe that promised to taste "Just like [item it's meant to replace]." but ended up tasting like wet cardboard that was paradoxically both slimy and gritty at the same time. BTW... just as a fellow keto traveler, I found a product that tastes exactly like it claims to taste. It's called LC-Milk. If you go to: www dot lowcarbfoods dot com and search for "milk" or "lc milk" you will see it. It's made in Raleigh NC, and somehow... it tastes... EXACTLY like regular ole cow's milk. There are so many nut milks out there, you might not even have a need for a low carb milk. But... I use it to make half-and-half for my coffee, and it's shockingly perfect. Blindfolded, I don't think even a calf could tell it wasn't real half-and-half. I also plan to use it to try to make a custard ice cream. All those 100% heavy cream Keto ice cream recipes out there have me thinking, the number of calories that simply HAVE TO be in two huge scoops of pure heavy cream can't be okay, no matter what diet you're on. Anyway... thanks for the killer video(s). You've been helpful more than you could ever really know.

    From what I've read there's regular lupin beans and sweet lupin beans (with seemingly the same macros). The flour and flakes made from the sweet variety avoid the bitterness. I've been buying the Lupina brand of lupin flour and that isn't bitter either. Now I have another option, thanks!

    I just ordered a few bags of Lupin flour yesterday! Not this brand so I hope its still good. Still not convinced about the actual number of calories in a serving due to not knowing the actual soluble vs insoluble fiber content but we will see after my testing! I was taught by my dad many years ago that was the correct way to use a microplane. He learned it from a chef back in the day.       Just be aware that these lupini flakes are a very different thing that lupin flour. You can't make this recipe with flour. I'm sure you're probably aware of that, but just mentioning it just to be safe.

    Your hummus recipe is soooo different from mine! 🧐 Can’t wait to try this 😁 When I get my Lupini flakes I’m going to try making overnight oats (Lupini flake version) with 10% Mediterranean Plain Yogurt! And see if I can figure out a pseudo-oatmeal cookie recipe too with those flakes too!

    This is a great keto Hummus. I'm glad it is not made out of cauliflower. I didn't think it would taste as good as it did. I didn't use the flakes that you recommended. I just used some flakes from a store and they were great. I will be making this again.
    I might try Aviate lupini flakes from Amazon next time. I saw a review on there and it mentioned Serious Keto and how good they were.

    Great video, I came over & watched this after seeing your Aviate giveaway video. I miss eating hummus, I use to make it out of Firm or Ex-Firm tofu quit often. Hum... got me thinking so I just checked and the tofu only has 1 gram of carbs per 3 oz serving & 0 sugars. Yum Yum.... I think I see some caramelized onion, roasted red pepper, roasted garlic & jalapeno hummus in my near future!
