      Belle Serra agree because this is not gumbo lol. I live in Mississippi, and live 45 minutes from New Orleans. That is NOT gumbo at all. Really all of the meals were poorly portrayed

    As a southern Georgia man, I'd like to speak for all southerners by saying, the food in this video is a sorry excuse for southern cooking. If they had real southern soul food, they wouldn't even be talking. They'd be in heavenly bliss.

    First if you have to chew any green leaf veggies for awhile then it wasn't cooked right. NOBODY from the south use chicken stock as "pot liquor". You flavor the water by cooking smoked meat until they fall apart in the water then add whatever greens you plan to cook. If you have to chew more than 3 times.. "it ain't done" 😎🤗🤗😎

      I grew up with my mom using ham hocks, but I found a recipe that used bacon. Now when I make greens, I fry a few pieces of bacon with garlic and pour in the water and greens with chili flakes and let it simmer for a while. It definitely should not be chewy. My mom loves it and my fiance and little sister likes it better than my mom's. (Don't tell her that though) lol

      @@Gabriellaella23I do what is called a quick pot liquor. Take about half an package of smoked bacon and mince it and drop it and your seasonings into the water that you plan to cook the greens in. Cook until tender not chewy

    I'm Southern. (South Carolina) I've never had most of what's on here. Collard greens and grits are fine but everything else is off base. Gumbo is southern but it's mainly a dish in Louisiana. You need some black eyed peas, " fat back" ,okra, country ham, buttermilk biscuits,sweet potatoes,hush puppies,chicken fried steak,corn bread,cobblers,chitlins (dont ever eat this),white gravy,baked mac and cheese,boiled peanuts,chicken and dumplings,sweet iced tea,fried green tomatoes,fried pickles,coleslaw, fried pork rinds,fried "crackilns" (same as rinds but smaller and more crunchy), And last but not least BBQ. Yes I know BBQ is every where but the best comes from the southern regions.

      You know from watching these videos I realize that the irish people making these videos are the ones that have to cook the food for the people to try because they are foods not commonly found in ireland. They often don't know themselves how the food should be, I'm sure they just go off what they find on the internet. The only times the food seems legit is when it's bought at a restaurant.

      +crazzynez ... and as someone who grew up eating Cajun food, even restaurants rarely get Cajun food right if they aren't in south Louisiana. I always thought of gumbo as a Cajun dish, not a southern one, and I've never had shrimp and sausage gumbo. Chicken and sausage yes, shrimp yes, but shrimp and sausage just don't go together in my mind. 😁

    As a Southerner, I feel qualified to comment, that I don't feel Southern food was represented well here in this video. For example, N'Orleans' food is not exactly called Southern as much as it is Cajun. We do not put milk in our grits. Where is the corn bread? We don't eat collards by themselves, and traditionally they have fat back or hamhocks in them. Also, how can you call it eating "Southern" without a tall glass of sweet iced tea? My southern family also has food traditions from German and Irish influences, as well as Southern US influences. Anyways - Happy Eating!

      I use cream or milk along with the water when I'm cooking stone ground grits or making rich cheese grits for shrimp and grits or grit fritters. If I'm just making a pot of grits for breakfast on Saturday, it's just water. I agree with you, though, this was a pretty poor showing of Southern food.

      I do not use chicken broth / stock in my collards. I use smoked, thick - cut bacon or ham hock, salt and boiling water. I've never seen a peach and pecan cobbler in my life and what were they doing using a biscuit as a basis for strawberry shortcake? Where is the fried chicken? I'm not talking about fried chicken gizzards either! Grits I cook with water not milk, add some cheese or butter.

    So... I'm from the south. As someone who was raised on authentic southern food, but who is now a vegan going on 3-4 years even I am offended by this. My great grandma is rolling in her grave right now over this mockery. If she were still alive and someone presented any of these "food items" to her she would say "Bless your heart, sweet pea!" and laugh hysterically at them.     Southern born and raised, and that's not proper southern food. Gumbo is generally thicker than that. Not that many people eat gizzards regularly anymore, maybe like once a year or more like every couple of years. Those grits didn't look right. The collards looked okay, but every southerner knows you've got to cook them a certain way, usually the way granny did. ...so I doubt they tasted right. And where's the cornbread? No southern meal is complete without cornbread, and there's lots of different ways to make it. Should've had a proper bowl of shrimp and grits, omg that's something that you have to try once before you die.
    Squash casserole, pork chops or a thick slice of bone-in ham, greens with pepper sauce, some creamy skillet corn, southern style green beans or butter beans, candied yams, a thick slice of sweet yellow cornbread fresh out of the oven, and a tall ice cold glass of sweet tea. Mmmmm....a southern feast! ...and dont even get me started on a southern breakfast, omg I'm craving it now. To hell with my cholesterol, I've got to have some homemade buttermilk biscuits and gravy in the morning...and if you can still find anyone who cures their own meats, get them to do you some real southern sausage. You'll never find anything bought at a store that comes close in taste. I've only found a couple of people who still do it. Southern food can be very good, but it's so fattening. And different regions in the south have different kinds of food. Hell, sometimes in different parts of a single state you can find different types of southern food that's unique to just that area. But when you consider that Alabama alone is about the size of Ireland and all of the states that make up the south are about the size of Europe, I reckon that's to be expected.

      Yep! All of this! When they brought out gumbo my first thought was that ain't Southern, that's Cajun or at least Louisianan, whole family does oatmeal and grits, I hate them both. And shrimp and grits,no thank you, but it is Southern, especially in the Low Country of SC.
      But yeah, corn bread, biscuits and gravy, well.... biscuits with everything, especially butter and molasses! Dang, I wouldn't have eaten what they were offered. Bleh! And tater tot casserole? WTF???

Except the cornbread, I have always done white corn meal in my cornbreads of any kind,meaning baked cornbread, fritters, hush puppies and breading my fish to fry. I've never tried the yellow, just grew up on the white corn meal. But other than that It
      sounds like what I cook.

    if you actually wanna try southern food go more towards soul food, not Cajun.
    try stuff like country ham, country fried steak, collard greens, fat back, fried green tomatoes, green beans and ham hocks, stuff like that. grits is almost the only thing y'all had that we actually eat.

      I'm from Florida. It's almost like a reversed microcosm of the United States. The further north you are, the more in the south you are. So, northern Florida, definitely southern. Sweet tea, grits, monster pickups with rebel flags. The whole deal. Down here in south Florida, it's almost civilized.

    my daughters Collard green aren't chewy, she lets them simmer 6 to 8 hours, i could eat a barrel full of her collard greens .
    they need to simmer a long time so they aren't chewy, the longer you cook them, the better they taste

      I felt the same way about the tater tot casserole. Geez. We don't eat that down here. I know it's gotta be hard to make those dishes if you weren't raised on them. Best way to do this would be find an authentic southern cook or chef that can take the raw ingredients and truly create what we eat.

    Chicken stock and chili in collards?! Where's the fatback or ham hocks?! You cook with those along with the collards to give them flavor instead of using chicken stock. Then add some hot sauce and/or Tabasco sauce when serving along with some cornbread.
    Milk in GRITS?! It's not oatmeal or porridge. LOL Cheese would have been better if you want some creaminess to it. Use white cheese if you don't want it looking yellow. You can even throw in some bacon with it or in it along with a yummy biscuit on the side.
    Good southern food has a lot of soul in it. That's what we in the Deep South call "Soul Food." I have no idea what you call some of what you just served. My family and friends would laugh at you if you served that stuff to us. LMAO

    We have gumbo every Christmas Eve. My favorite and most looked toward meal of the year! Gizzards are great. Lots of Irish folks settled down south couple hundred years ago. (I am a descendant of such fine folk.) This is so far the best menu for different areas ever. Welcome to the Gulf Coast, y'all!

      +Keith Murray lol my family call those Yankee grits. Our next door neighbors always made theirs with sugar and they were from New York, so that kinda confirmed the name for us. Lol. No offense if your a northerner. Try them with salt, pepper, butter and some fried eggs or as suggested to me just now, country ham and gravy. :)

    For anybody wondering, "grits" is corn (maize). When ground to meal, parts of the corn are quite a bit harder. Those *grit*ty particles of corn are sifted out and use separately.

    I'm mean no dishonour to you, but I'm from Georgia (deep-south), and yes, I'm Irish, but am from Georgia just the same, and none of that food is how we'd make it--no offense.
    Come visit me and I'd be happy to make some real Southern food for you all (though in Georgia, they'd say "ya'll").

    Just remember that a lot of Americans are Irish. The gizzards are a chicken's craw... It houses stones which grind the seeds they eat. Grits are corn and every one here puts butter on corn. Collard greens are better served with vinegar.

      In my house grits are like a condiment. They have to be eaten with other things. The best breakfast is to add salt, pepper, cheese, eggs, and bacon and mix it all together. Also a nice addition for dinner is fried fish and cheese. Plain grits with no added food need loads of seasoning and butter. Why was milk on the list of ingredients? Milk has no business being in grits. Lol.

    There is no one way to make gumbo. Everyone does it their own way. Some do seafood and some do chicken and sausage. Some add okra and tomatoes and some leave them out. It's a spicy soup with rice that starts with a roux (oil and flour cooked to a desired color from peanut butter brown to dark fudge black) then water and meat is added. Rice is cooked on the side and mixed in bowls when ready to eat.

      I make mine with shrimp and sausage. I use file because I don't like okra. It comes in a pack at the store I go to and I only need 3 or 4 pods so the rest get tossed into the compost. I use Alton Browns recipe and it is one of my favorite things so cook.
